Easy Air Fryer Frittata

This delicious and easy air fryer frittata is the perfect airfryer breakfast, which also works great for meal prep.

Ingredients

  • 120 g finely sliced ham roughly chopped (£1.98)
  • 6 eggs £1.50
  • 3 mixed peppers finely diced (£1.59)
  • 3 spring onion thinly sliced (£0.69/2)
  • 80 g spinach £1
  • 300 ml cottage cheese £0.79
  • Fresh chives finely chopped to serve (£0.60/2= £0.30)

Instructions

  • In a bowl, cover the spinach in boiling water for 1 minute. Drain in a collider and rinse in cold water. Squeeze the excess moisture out of the spinach and set aside.
  • Combine the eggs and cottage cheese by whisking until incorporated. Season generously with salt and pepper, then stir the peppers, spinach, ham and spring onion into a bowl.
  • Place parchment paper into your cake tin, then spray with oil. Pour the egg mix into the tin and pop in your airfryer basket. I like to spray the top with a little oil too for the best colour.
  • Cook at 350°F/180°C for 15-30 minutes, depending on the size of your tin. Leave to rest for 5 minutes, then remove from the tin and slice into portions. Top with fresh chives & enjoy!

Notes

  • Avoid overcooking: The cooking time can vary based on the size and shape of your dish, which is why I recommend a range of 15-30 minutes. After 15 minutes, test the frittata by inserting a knife into the center. It’s done when the frittata is firm and the knife comes out clean.
  • Prevent sticking: To avoid sticking, we cook the air fryer frittata with parchment paper. I like to lightly coat the paper with oil spray for extra insurance. Allowing the frittata to rest after cooking helps the eggs naturally release from the paper.
  • Season the egg mixture: Make sure to add salt and pepper to the egg mixture before cooking. This ensures that the frittata is evenly seasoned throughout.
