Easy Air Fryer Spring Rolls

Bursting with umami, these air fryer spring rolls are the ultimate fakeaway starter or snack, made in under 25 minutes.

Ingredients

  • 15 spring roll wrappers (£2.10)
  • 4 spring onions, finely chopped (£0.65)
  • 300 g stir-fry vegetable mix (£1)
  • 500 g ground chicken (£2.50)
  • 3 red chillies, finely chopped (£0.55)
  • 50 g fresh ginger, peeled and finely chopped (£0.30)
  • 4 cloves of garlic, finely chopped (£0.39)

Cupboard Essentials

  • 2 tbsp vegetable oil
  • 4 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 2 tbsp soy sauce

Instructions

  • To a frying pan, add the vegetable oil, chillies, ginger and garlic. Fry for two minutes, then add the chicken mince. Season with salt and pepper and fry over a high heat for 5 minutes.
  • Next, add the stir fry mix, oyster sauce, fish sauce, soy sauce and spring onions. Continue to fry for 3-4 minutes, or until all the moisture is cooked out. Taste to adjust the seasoning if necessary.
  • Pour on a plate and allow to cool for 5 minutes.
  • Place two tbsp of the chicken mixture around 2 inches from the corner of the wrapper. Fold the bottom edge over the filling, then roll up halfway.
  • Fold the left edge and right edge into the center to form a parcel, then with a wet finger, trace along the edge. Fold the top edge over to tightly seal.
  • Spray your airfryer basket with oil, then add 5 spring rolls in. Spray the top of the spring rolls with oil and cook for 12 minutes at 200°C/405°F.

Notes

  • Make sure to cook off any excess moisture from the vegetables and chicken to avoid soggy wrappers.
  • Avoid overfilling the wrappers, as this can make them difficult to fold.
  • Pair with your favorite dipping sauce when serving.
  • Let the filling cool for about 5 minutes on a plate before using.
  • Taste the filling before assembling or placing the spring rolls in the air fryer to adjust the seasoning if needed.
