To a frying pan, add the vegetable oil, chillies, ginger and garlic. Fry for two minutes, then add the chicken mince. Season with salt and pepper and fry over a high heat for 5 minutes.
Next, add the stir fry mix, oyster sauce, fish sauce, soy sauce and spring onions. Continue to fry for 3-4 minutes, or until all the moisture is cooked out. Taste to adjust the seasoning if necessary.
Pour on a plate and allow to cool for 5 minutes.
Place two tbsp of the chicken mixture around 2 inches from the corner of the wrapper. Fold the bottom edge over the filling, then roll up halfway.
Fold the left edge and right edge into the center to form a parcel, then with a wet finger, trace along the edge. Fold the top edge over to tightly seal.
Spray your airfryer basket with oil, then add 5 spring rolls in. Spray the top of the spring rolls with oil and cook for 12 minutes at 200°C/405°F.
