Ingredients

  • 150 g Boursin, garlic & herbs (£1.75)
  • 600 g cherry tomatoes (£0.69x2)=(£1.38)
  • 1 red onion, sliced into thin pieces (£0.13)
  • 4 cloves of garlic, skin left on (£0.39)
  • 350 g pasta, pasta shape of choice (£0.41)
  • Fresh basil, torn to serve (£0.60)

Cupboard Essentials

  • 1 tbsp extra virgin olive oil
  • 1 tsp dried Italian herbs
  • Salt and pepper

Instructions

Preheat your oven to 370°F/190°C

  • To a cast iron/stainless steel pan, remove the boursin from the foil and place in the center. Distribute the cherry tomatoes, onion and garlic around the Boursin. Coat with oil, Italian herbs and a generous pinch of salt and pepper. Cover with foil and pop in the oven for 15 minutes.
  • After this time, remove the foil and cook for a further 15 minutes, uncovered.
  • Wait around 5 minutes, then add your pasta to heavily salted boiling water. Set your timer according to the packet time. Reserve a decent mug of pasta water before draining.
  • Remove the pan from the oven carefully, then remove the garlic from its skin. Use a knife to squish the roasted garlic into a paste and add back into the pan. Use a fork to squish around half of the tomatoes, then stir to incorporate the cheese.
  • Add the cooked pasta and stir to combine. Loosen with a few splashes of pasta water until you get a smooth sauce consistency. Top with fresh basil and lots of black pepper. Enjoy!

Notes

  • Add pasta water gradually for a creamy sauce in Boursin cheese pasta; adjust as needed.
  • Quickly extract roasted garlic with tongs or a knife to save time.
