Ingredients

  • 2 tsp onion powder
  • 2 tsp Garlic powder
  • 2 tsp mushroom bouillon
  • 1 tsp Cayenne pepper
  • 2 tsp brown sugar
  • 2 tsp black pepper
  • 1 tsp dried thyme
  • 2 tsp salt

Instructions

  • Combine all of the ingredients so that they are incorporated.
  • Store in clean, dry airtight container at room temp until needed.

Notes

  • This makes enough seasoning for around 1kg of collard greens. Feel free to multiply to quantities to suit your preference.
  • Store your collard greens seasoning in a clean, dry, airtight container to keep the spices fresh.
  • The mushroom bouillon is what gives the collard seasoning its depth, but if you don't have it, use chicken or vegetable bouillon instead.
  • The brown sugar isn't for a sweet taste, but rather for balance as it helps to round out the savoury, salty, and spicy notes.
