Easy Cottage Cheese Egg Bites

- 150 g turkey bacon (£2.50)
- 8 eggs (£1.50)
- 2 romano peppers, finely diced (£1.55)
- 300 g cottage cheese (£0.90)
- 100 g cheddar, grated (£2.50/2= £1.25)
- 3 spring onions, thinly sliced (£0.60)
- 2 tbsp fresh chives, finely chopped (£0.52)
Preheat your oven to 200°C/400°F.
To a foil-lined air fryer basket, add your turkey bacon. Add a few sprays of oil and cook at 200°C/400°F for 10 minutes.
Meanwhile, whisk the eggs and cottage cheese together. Once thoroughly mixed, stir the Romano peppers, spring onions, 1 tbsp fresh chives and two-thirds of the cheddar. Season with salt and pepper.
Spray a muffin tin with oil, then add a few spoonfuls of the egg mix into each hole, leaving about ½ cm from the top to allow some rise.
Top with the remaining cheddar and bake for 12-18 minutes, or until the egg is fully set.
Let rest for 10 minutes and finish with a sprinkle of fresh chives and a crack of black pepper.
