Ingredients

  • 4 approx 17 oz (480g) turkey steaks (£4.40)
  • Handful of fresh parsley, finely chopped (£0.60)
  • 2 cloves garlic, minced (£0.39)
  • Juice of half a lemon (£0.30)

Cupboard Essentials

  • 1 tbsp rapeseed oil
  • 2 tbsp flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Cayenne pepper
  • Salt & pepper
  • 100 ml chicken stock

Instructions

  • Add the flour and seasoning to a bowl. Coat the turkey steaks in the mix.
  • To a large frying pan, and the rapeseed oil and increase the heat to high. Allow the pan to preheat. Once hot, add the turkey steaks into the pan, evenly distributed so they aren't overlapping.
  • Leave to sear over a high heat for 2 minutes, then rotate and cook for a further minute. Depending on the thickness of your turkey steaks, adapt the cook time.
  • Set aside and deglaze the pan with the chicken stock. Add the garlic at this stage and gently cook for a minute, reducing the heat to low.
  • Add the turkey steaks back into the pan, along with the lemon juice. Baste the pan sauce over the steaks and turn off the heat. Top with fresh parsley, and a crack of black pepper.

Notes

  • Sear turkey steaks over high heat for a short time to keep them moist and tender.
  • Season liberally with bold spices to enhance the stronger flavor of turkey.
  • Use a stainless steel pan with rapeseed or olive oil for an even, golden-brown sear.
