Energy Balls with Dates

Whole-food energy balls with dates, naturally sweetened and packed with fibre, ready in 8 minutes. Freezer-friendly and budget-friendly.

Ingredients

  • 100 g Medjool dates, pitted (about 10–12)
  • 100 g almond butter
  • 80 g oats
  • 1 tbsp maple syrup
  • 1/2 tsp ground ginger
  • Pinch of sea salt, to finish

Instructions

  • Add the dates to the food processor and blitz to a sticky paste.
  • Add the almond butter, oats, maple syrup and ginger, then blitz again until it clumps together.
  • Roll into 12 balls, pressing firmly so they hold.
  • Sprinkle with a pinch of sea salt to finish.

Notes

• Adjust the texture as you go. If the mixture feels too dry to hold together, add a splash of water; too wet, add a spoonful more oats.
• Don't skip the flaky salt to finish. Sprinkled on right at the end, it contrasts with the sweetness and really lifts the whole thing.
• Chilling firms them up and makes them easier to handle, but it's optional — half an hour in the fridge is all it takes if you want to.
