Halloumi Peri Peri Salad

This hot honey halloumi peri peri salad is high protein, veggie and lasts all week, with a creamy peri peri dressing that's seriously moreish.

Ingredients

For the tray

  • 2 blocks halloumi approx. 450g, sliced
  • 3 mixed peppers sliced
  • 1 can sweetcorn approx. 165g, drained
  • 3 cans chickpeas approx. 240g each, drained, tossed in smoked paprika
  • 200 g asparagus trimmed
  • 1 tbsp olive oil for the vegetables
  • salt and pepper to season
  • 2 tsp smoked paprika for the chickpeas

Stirred through once cooled

  • 1/2 red onion sliced
  • 200 g cherry tomatoes halved
  • 1 cucumber diced

Peri peri dressing

  • 400 g fat-free yoghurt
  • 2 tbsp peri peri sauce
  • 2 tbsp fresh parsley chopped
  • 1/2 lemon juice only
  • salt and pepper to season

To finish

  • 1 tsp hot honey per serving, approx. 5 tsp total

Instructions

  • Add your halloumi, peppers, sweetcorn, chickpeas and asparagus to a foil lined roasting tray. Drizzle 1 tbsp olive oil over the veg and chickpeas. Season with salt and pepper, and coat the chickpeas in 2 tsp smoked paprika.
  • Roast at 200°C for 25 minutes, then allow the tray to cool.
  • Slice the red onion, halve the cherry tomatoes, stir both through the cooled roasted mix.
  • Whisk or blend the yoghurt, peri peri, parsley, lemon juice to form the dressing. Season with salt and pepper.
  • Pour the dressing onto the salad ingredients and toss to combine.
  • Portion into 5, dress, then drizzle 1 tsp hot honey over each to finish.

Notes

• Cool the tray fully before adding the fresh bits. Warm roasted veg will wilt the raw onion and tomato, and that cooling step is what keeps this salad fresh for days.
• Keep the dressing separate until you serve. Store it in a little pot and dress each portion as you go, so nothing turns soggy in the fridge.
• Save the hot honey for the last second. A teaspoon drizzled just before eating gives you the best sweet-heat hit.
