Hot Honey Halloumi Bowls

These hot honey halloumi bowls are crispy, high protein and ready in under an hour, perfect for easy weekly meal prep.

Ingredients

  • 450 g light halloumi (2 blocks), cut into cubes
  • 900 g frozen sweetcorn
  • ½ red onion, thinly sliced
  • 400 g 0% fat Greek yogurt
  • 1 lime, juiced, plus wedges to serve
  • handful of fresh coriander, chopped
  • 2 x 400g tins chickpeas, drained and rinsed
  • 2-3 mixed peppers, diced
  • 3 stalks celery, diced
  • 5 tsp hot honey, to serve (1 per bowl)

  • 1 tbsp vinegar
  • salt

Instructions

  • Roast the cubed halloumi and frozen sweetcorn on a lined tray (or two, if crowded) at 200°C fan for 25-30 minutes, stirring halfway, until golden and charred.
  • Quick-pickle the sliced onion in a bowl with 2 tbsp water, the vinegar and a pinch of salt while everything else comes together.
  • Make the dressing by mixing or blending the yogurt, lime juice and coriander, seasoning with salt and pepper, and loosening with a splash of water if needed.
  • Combine the drained chickpeas with the diced peppers and celery in a large bowl.
  • Once cooled slightly, add the roasted halloumi and corn plus the pickled onion, and toss together.
  • Divide between 5 bowls, top with the dressing, hot honey and a lime wedge.

Notes

• Don't overcrowd the tray when roasting the halloumi and corn, split across two trays if needed so everything chars instead of steams
• Keep the dressing and hot honey separate until you're ready to eat if you're meal prepping, so everything stays fresh
• Love spice? Stir a teaspoon of chilli flakes into the dressing
