- 2 kg chicken wings
- 3 tbsp cornflour
- 5 tbsp buffalo franks hot sauce
- 1 tbsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 2 tsp Italian seasoning
- Salt & Pepper
- 1 tbsp olive oil
Preheat oven to 400°F / 205°C.
Pat the chicken wings with paper towel to remove any excess moisture, then add to a large mixing bowl and coat in cornflour, smoked paprika, onion powder, garlic powder and Italian seasoning.
Next, add the Frank's hot sauce, olive oil and a generous pinch of salt and pepper. Use tongs to ensure everything is incorporated.
Place the wings on a wired rack over a baking sheet and pop in the oven for 35-45 minutes, or until the wings reach an internal temperature of 165°F.
Allow the wings to rest for 5 minutes before tucking in.
- If you have time, marinade the chicken wings in the seasoning/hot sauce for a couple of hours before cooking. This isn’t necessary but it’s an added bonus!
- Cook on a wire rack in a baking tray to get the best crispy exterior.
- I remove the tips before coating & cooking to reduce the space taken in tray, to ensure maximum colour by having them evenly spaced out.
