Ingredients

  • 650 g chicken breast, large pieces sliced in half across width (£3.71)
  • 1 white onion, finely diced (£0.16)
  • 80 g sundried tomatoes, roughly sliced (£2.00/2)=(£1.00)
  • 4 cloves of garlic, minced (£0.39)
  • 300 ml double cream (£1.35)
  • 50 g parmesan/hard cheese, finely grated (£1.75/3=(£0.58)
  • Bunch of fresh basil, torn to serve (£0.55)

Cupboard Essentials

  • 2 tbsp flour
  • 1 tbsp sun-dried tomato oil from jar
  • 400 ml chicken stock
  • 1 tbsp white wine vinegar
  • 1 tsp paprika
  • 1 tsp thyme
  • Salt & Pepper

Serve with rice

Instructions

  • Dredge the chicken breast in flour and shake the excess off. To a large stainless steel pan, add the sun-dried tomato oil.
  • Preheat the pan to a high heat, then add the chicken breasts. Leave to fry for 3 minutes, then rotate and fry for a further 3 minutes. Set aside.
  • Deglaze the pan with a splash of chicken stock to get all of the crispy bits off of the bottom of the pan. Add the onion and sun-dried tomatoes and reduce the heat to medium/low. Season with salt and lots of pepper and fry for 5 minutes.
  • Next, add the garlic, paprika and thyme into the pan. Fry for a couple of minutes before adding the cream, hard cheese/parmesan, vinegar and stock.
  • Place the chicken back into the pan to cook for a further 7 minutes. Serve with fresh basil and a crack of black pepper (enter proposal)!!

Notes

  • Pound the chicken breasts for quicker cooking: Flatten the chicken breasts with a meat mallet or rolling pin to achieve thinner pieces, ensuring faster cooking times.
  • Consider using chicken thighs instead of breasts to save on costs and maintain affordability.
  • Enhance the flavour by seasoning chicken with salt and pepper before searing, but be cautious not to oversalt.
