Marry Me Orzo

- 3 medium courgettes, grated
- 80 g sundried tomatoes
- 2 cloves of garlic, minced
- 500 g orzo
- 200 g cream cheese
- Handful of fresh basil
- Juice of half a lemon + zest
Cupboard Essentials
- 1 tsp onion granules
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 1.2 litres vegetable/ chicken stock
- Salt
- Pepper
Preheat oven to 200°C FAN.
To a deep baking dish, add the courgette, sundried tomatoes, garlic, orzo, seasonings, lemon zest, stock, salt and pepper. Stir to combine and cover with foil. Bake for 20 minutes.
After this time, remove the foil and slowly stir the cream cheese into the orzo. Fold the basil through and cook for a further 10-15 minutes, or until cooked and thickened.
Finish with lemon juice and a big crack of black pepper (or chilli flakes if you love heat!)
- Make sure you use foil, it traps the steam and ensures the orzo cooks evenly.
- Stir the cream cheese in slowly- this prevents it from splitting.
- Use lemon zest at the beginning, lemon juice at the end!
