Marry Me Orzo

 Creamy, cheesy and hidden veg, this marry me orzo is a one-pan bake ready in 30 minutes.

Ingredients

  • 3 medium courgettes, grated
  • 80 g sundried tomatoes
  • 2 cloves of garlic, minced
  • 500 g orzo
  • 200 g cream cheese
  • Handful of fresh basil
  • Juice of half a lemon + zest

Cupboard Essentials

  • 1 tsp onion granules
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1.2 litres vegetable/ chicken stock
  • Salt
  • Pepper

Instructions

  • Preheat oven to 200°C FAN.
  • To a deep baking dish, add the courgette, sundried tomatoes, garlic, orzo, seasonings, lemon zest, stock, salt and pepper. Stir to combine and cover with foil. Bake for 20 minutes.
  • After this time, remove the foil and slowly stir the cream cheese into the orzo. Fold the basil through and cook for a further 10-15 minutes, or until cooked and thickened.
  • Finish with lemon juice and a big crack of black pepper (or chilli flakes if you love heat!)

Notes

  • Make sure you use foil,  it traps the steam and ensures the orzo cooks evenly. 
  • Stir the cream cheese in slowly- this prevents it from splitting. 
  • Use lemon zest at the beginning, lemon juice at the end!
