Ingredients

  • 2 fillets of fresh cod (£4.50)
  • 1 heaped tbsp of harissa (£2/5= £0.40)
  • Handful of fresh herbs, I used dill & parsley (£0.52)
  • ½ lemon, sliced into wedges (£0.30)

Cupboard Essentials

  • 2 tbsp extra virgin olive oil
  • 2 tsp honey
  • Black pepper
  • Salt

Instructions

  • Method
  • Preheat your air fryer to 200°C/ 400°F.
  • Pat the cod fillets with a paper towel to remove any excess moisture.
  • Combine the ingredients for your marinade on a plate. Mix the harissa, extra virgin olive oil, honey, salt and pepper.
  • Add your cod fillets and evenly coat with the harissa mix. Use your hands to gently spread the marinade.
  • Place the pieces of cod onto foil, then place in your airfyer basket. Cook for 7-12 minutes at 200°C/400°F., depending on the thickness/size of your fillets. The cod should reach an internal temp of 63°C/145°F.
  • Serve with a squeeze of lemon and top with fresh herbs. Enjoy!

Notes

  • Pat with a paper towel before seasoning. 
  • Preheat your airfryer- we’re aiming for a fast cook time with this cod in the airfryer to get the most tender flaky end result.
    Use foil to reduce the clean-up time and also lock in the flavorful juices. 
  • Avoid overcrowding to get the best color & texture.
