- 2 fillets of fresh cod (£4.50)
- 1 heaped tbsp of harissa (£2/5= £0.40)
- Handful of fresh herbs, I used dill & parsley (£0.52)
- ½ lemon, sliced into wedges (£0.30)
Cupboard Essentials
- 2 tbsp extra virgin olive oil
- 2 tsp honey
- Black pepper
- Salt
Method
Preheat your air fryer to 200°C/ 400°F.
Pat the cod fillets with a paper towel to remove any excess moisture.
Combine the ingredients for your marinade on a plate. Mix the harissa, extra virgin olive oil, honey, salt and pepper.
Add your cod fillets and evenly coat with the harissa mix. Use your hands to gently spread the marinade.
Place the pieces of cod onto foil, then place in your airfyer basket. Cook for 7-12 minutes at 200°C/400°F., depending on the thickness/size of your fillets. The cod should reach an internal temp of 63°C/145°F.
Serve with a squeeze of lemon and top with fresh herbs. Enjoy!
