Course: Dessert
Cuisine: American
Servings: 12
- 100 g butter ½ cup, softened
- 250 g full-fat cream cheese
- 300 g icing sugar
- 50 g cocoa powder
- 1 tsp vanilla essence
- Pinch of salt
Beat the butter until pale and fluffy.
Add the cream cheese and vanilla essence, then beat again (don’t overbeat or it’ll loosen).
Sift in icing sugar, cocoa, and salt. Beat until smooth.
Taste to adjust sweetness or chocolate intensity, by either adding more icing sugar or cocoa powder.
- Use block cream cheese as the spreadable versions make the chocolate cream cheese frosting way too soft.
- Add a small splash of milk to loosen it slightly if it feels too thick. If it's too thin, add a bit more icing sugar or cocoa powder, or pop it in the fridge for 10 minutes to firm up.
- Take a minute to sift your cocoa and sugar to stop any lumps and get a super-smooth finish.
- The butter should be soft but not melted.
