Ingredients

  • 3 tins tuna (£2.37⁠)
  • 3 courgettes (£1.15⁠)
  • ½ red onion (£0.47⁠)
  • 1 red bell pepper (£0.42⁠)
  • 2 lemons (£0.59⁠)

Cupboard Essentials

  • 1 tbsp mayonnaise
  • Pinch dried oregano
  • Red pepper flakes
  • Salt & Pepper

Instructions

High in protein, includes mayo 🧡 and has all the volume, minus the calories. Make sure you buy tuna in brine/water instead of in oil. Save the calories for the mayo. ⁠

  • I eat these fresh so only make one at a time (fine to make in the morning and eat at lunch time!)
  • Grate one whole courgette and add it into a mixing bowl.
  • Finely dice half a red onion and ⅓ or the bell pepper and throw in the bowl.
  • Drain the tuna and add to the mixing bowl. Add 1 tbsp of mayonnaise and the juice of half a lemon (less if you’re not that into lemon) and a pinch of dried oregano. Stir to combine everything and season with salt, pepper and a pinch of red pepper flakes.
