Roasted Sweet Potato Cubes

Ingredients

  • 1 kg sweet potatoes, washed thoroughly (£1.20)

Cupboard essentials

  • 3 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper

Instructions

Preheat your oven to 190°C FAN/ 210°C conventional / 370°F to 410°F

  • Start by slicing your potatoes into 1 inch cubes. Add foil to a baking sheet, then add the potato cubes, paprika, onion and garlic powder. Season generously with salt and pepper.
  • Drizzle over the olive oil and toss with your hands, ensuring all of the sweet potato cubes are evenly coated.
  • Pop in the oven for 30 minutes, shaking the tray halfway.
  • Serve with a sprinkle of salt and black pepper and dig in!

Notes

  • Leave space between sweet potato chunks for a crispy exterior and consider using two baking sheets for smaller ones.
  • Flip sweet potatoes only once to allow caramelisation.
  • Don't skip the oil for a crispy texture and to prevent sticking.
  • Use foil on the baking pan for easy cleanup after caramelisation.
