Simple Blueberry Oatmeal Bars (On The Go Breakfast!)

- 200 g rolled oats (£0.90/5)=(£0.18)
- 150 g blueberries (£1.79)
- 2 mashed bananas (£0.99/2)=(£0.50)
- 1 egg, beaten (£0.25)
- 250 ml plain or Greek yogurt (£0.35)
Cupboard Essentials
- 2 tbsp vegetable oil
- 3 tbsp honey
- ½ tsp vanilla extract
- A spinkle of brown sugar (optional)
Preheat oven to 350°F/180°C
Start by mashing the banana and then mix with the egg, honey, oil and vanilla extract. Then add the oats to the mixing bowl and add the blue berries last. Gently mix together.
Line a rectangular baking tray with parchment paper, before pouring in the mixture. Spread with the back of your spoon to level the mix and top with some brown sugar.
Pop in the oven for 20-25 minutes, until the oat mix starts to turn golden brown on top.
Remove from the oven and allow to cool, before dividing into 6 bars and pop in the fridge.
Heat for 30 seconds each time you eat breakfast and serve with yogurt and a drizzle of honey. (Can also be eaten cold if you have to eat on route)!
- Line the baking dish with parchment paper to prevent sticking.
- Adjust the sweetness to your preference; increase the honey for sweeter bars.
- When freezing, tightly seal clingfilm with multiple layers to prevent freezer burn.
