The BEST Avocado Toast with Halloumi

The best avocado toast, elevated with halloumi & tomatoes. An ideal brunch recipe to share with friends and family.

Ingredients

  • 225 g halloumi, cut into thin slices (£2.70)
  • 4 large/8 small slices sourdough, lightly toasted (£1.60)
  • 2 beef tomatoes, cut into slices (£1.50)
  • 2 avocados, thinly sliced (£1.20)
  • 1 lemon, cut into wedges (£0.30)

Cupboard Essentials

  • 4 tbsp mayonnaise
  • 1 tbsp rapeseed oil
  • Salt & Pepper

Instructions

  • I found that one block between 4 people was a good amount of halloumi to work with, given all the other fun stuff that goes on with this toast. If you want more though- feel free to whip up two blocks.
  • Frying in batches, add the rapeseed oil & thinly sliced halloumi into a non-stick frying pan on a medium heat. Rotate the halloumi once golden brown, after approx 3 minutes and fry the other side.
  • Lightly layer one side of the semi-toasted sourdough with mayonnaise. Place the bread mayo-side down in a non-stick pan and gently fry until the bread has turned golden brown and crispy.
  • Rotate to fry the other side for one minute, we’re not trying to achieve the same level of crisp here.
  • Make sure you layer in the order suggested starting with the crispy mayo side up – I have thought about it too much and the order is very intentional lol. Add a dollop of mayo, spread evenly across the toast. Then add two pieces of sliced beef tomato, seasoning with salt.
  • Next, add the sliced avocado with a squeeze of lemon, seasoning with pepper. Finally, top with halloumi & if you love a bit of acidity, go for another squeeze of lemon. best. toast. ever.
