Ingredients

  • 3 large chicken breasts, sliced in half (£4.25)
  • Lemon wedges to serve (£0.30)
  • Optional fresh parsley (£0.60)

Cupboard Essentials

  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp dried parsley
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt

Instructions

Preheat your oven to 400°F/ 205°C

  • Carefully slice the chicken lengthwise from the thickest part to the thinnest, starting from the top and working down. Place the chicken in a bowl.
  • Combine the seasoning in a small bowl with a big pinch of salt. Using tongs, evenly coat the chicken with the seasoning, then add the oil and toss to combine.
  • Place on a large baking tray, ensuring no pieces are overlapping. Cook for 8-12 minutes, or until the internal temp reaches 165℉ (74℃).
  • Serve with a squeeze of lemon and a crack of black pepper. You can optionally top with your fave fresh herbs!

Notes

  • Thin chicken to ¼ inch by slicing, pounding, or using pre-sliced cutlets.
  • Cook to an internal temperature of 165℉/74℃ using a meat thermometer.
  • Let the chicken rest to retain moisture and tenderness.
