Try this healthy and filling Quinoa Stuffed Butternut Squash recipe. An easy and super simple vegetarian meal, that is packed full of flavour and so tasty!
1medium sized butternut squash(£0.60)
A few cherry tomatoes(£0.25)
Salt & Pepper
Preheat oven to 200°C.
Heat the butternut squash for 5 minutes in the microwave, this will make it easier to cut in half. Once it’s heated, slice through and score the squash, removing the seeds. Glaze both pieces with a tbsp of olive oil.
Pop in the oven and set the timer to 45 minutes ( this will vary depending on the size of your squash so check regularly). Relax for 25 minutes!
When your timer has 20 minutes left, place the quinoa in a medium sized saucepan, pouring in 500ml of vegetable stock. Reduce heat to simmer.
Meanwhile, add the sliced onion and tomatoes to the baking tray with your squash.
When the timer is up, all the components of the dish should be ready. Season with salt and pepper, with the feta/goats cheese and fresh parsley to serve!
