This salad has the perfect combination of tangy feta cheese and the sweet pomegranate seeds. So colourful and nutritious, and easy to whip up in less than 15 minutes!

Ingredients

  • 280 g wholegrain couscous (£0.99)
  • 1 red onion (£0.65/3)= (£0.22)
  • 1 bag mixed leaf salad (£0.59)
  • 200 g feta (£0.75)
  • 1 pomegranate (£0.99)
  • 1 lime (£1.05/5)=(£0.21)
  • Bunch of fresh mint (£0.48)

Cupboard Essentials

  • 1 veggie stock cube
  • Salt

Method

  • Add the amount of boiling water stated on the cous cous packet and cover with a lid. I used vegetable stock to add some flavour.
  • Finely dice the red onion and remove the pomegranate seeds from the fruit. There are loads of fancy methods of doing this but I just slice it in half widthways, place it facing down on a chopping board and hit it with something hard. It’s great if you’re in a mad mood.
  • Finely slice the fresh mint, removing the leaves from the stalks before cutting.
  • One the couscous has absorbed the water. Place in a different bowl and pop in the freezer for 5 minutes to cool.
  • Stir in the onion and mint the juice of one lime. Season with salt.
  • Divide up into the meal prep containers, adding a handful of salad into each portion. Sprinkle the feta and pomegranate on top and you’re good to go.
