Try these healthy and tasty Mexican inspired smokin eggs. A great way to start your day and easy meal prep, and ready in just 10 minutes!

Ingredients

  • 12 eggs (£1.55)
  • 6 salad tomatoes (£0.64)
  • 1 chilli (£0.45)
  • 2 spring onions (£0.53)
  • 1 bunch of fresh coriander (£0.35)

Cupboard Essentials

  • ¼ tsp turmeric
  • 1 tsp of chilli powder
  • Salt & Pepper

Method

Spice up your standard scrambled eggs with this Mexican twist.

  • Finely chop half the bunch of fresh coriander & spring onions and dice the tomatoes and chilli.
  • Whisk the eggs in a large mixing bowl, seasoning with ¼ tsp turmeric, 1 tsp of chilli powder, and a pinch of salt & pepper.
  • Pour in the spring onions and coriander into the egg mix whisk.
  • Add the eggs to a large saucepan on a medium heat. Stir constantly until you get your desired constancy minus a few seconds (when you reheat in the mic they will dry up a little).
  • Divide into your meal prep containers and once you’ve heated them up on the day of eating, sprinkle over the tomato, chilli and fresh cori.
