This vegan ragu is packed with flavour and so quick and easy to make. The base of recipe is the browned mushrooms and onions with the bloomed spices, then add handful of ingredients to make this super tasty meal.

Try this simple and easy to make Rainbow Stir-fry. With the array of colourful and tasty veggies, and this meal a great way to get in your micronutrients!


  • 2 courgettes (£0.80)
  • 3 carrots (£0.29)
  • 2 cloves of garlic (£0.69/3)=(£0.23)
  • 1 egg (£0.75/6)=(£0.13)
  • 2 red onions (£0.16)

Cupboard Essentials

  • 1 tsp all spice
  • ½ tsp ginger
  • 1 tbsp soy sauce
  • ½ tbsp coconut oil
  • Black pepper


  • Prepare the veg by spiralising the carrots and courgettes using a cheap peeler and slicing the onions.
  • Pop the carrots and onions in a pan with a ½ tbsp of coconut oil and gently fry for 5-6 minutes.
  • Once the carrots and onions have softened add the courgettes in with the seasoning, garlic and soy sauce. Cover with a lid for a couple of minutes.
  • This step is optional but if you want to make it egg fried, add your egg in at this stage and stir for a minute or too.
  • Serve with black pepper and some chilli sauce if you want to spice it up a bit!
