I’ll go as far as saying this chipotle chicken recipe tastes better than the real deal. The marinade does all the work for you, so you get charred, juicy thighs with hardly any effort on your part. I love to pair it with my Nando’s-inspired spicy rice , an unbeatable fakeaway duo.

  • Chipotle peppers in adobo: The smoky, spicy backbone of the whole dish. This is where all that deep flavour comes from. This is probably the slightly harder to find ingredient, so I’d check your supermarket’s website before heading there. I got mine from Ocado.
  • Smoked paprika: My shortcut to that charred, moreish taste without any specialty spices.
  • Lime: The juice and zest brighten everything up and help tenderise the meat.

Variations/ Adaptations

  • Go leaner: swap the thighs for breast if you prefer, just watch the timings – cook each side for araound 3-4 minutes over a high heat, checking the internal temperature if you’re unsure.
  • Peri peri twist: if you love a charred, spiced thigh, this is a close cousin of my Nando’s peri peri chicken, so lean into extra lemon and garlic for that vibe. This is also a great recipe to follow if you struggle to find the chipotle peppers as it uses only cupboard essentials.
  • Turn it saucy: hold back a spoonful of the blended marinade, warm it through, and drizzle it over the sliced chicken as a punchy finishing sauce.
  • FOR CHILDREN: I would reduce the chipotle peppers to 20g-30g if kids are enjoying the recipe. You can also add some roasted red peppers to maintain the brightness in the marinade when reducing the chipotle.

How to make Chipotle Chicken Recipe

Step 1: Pour all of the marinade ingredients into your food processor.

Step 2: Blend until smooth.

Step 3: Pour over the chicken and stir to combine.

Step 4: Cover and marinate for at least 1 hour.

Step 5: Heat a griddle pan or BBQ until medium-high and very hot. Cook the thighs 5 to 6 minutes each side until charred.

  • Marinate overnight if you can, or during the day as you work in the fridge. An hour works in a pinch, but the flavour deepens the longer it sits.
  • Get that griddle ripping hot before you add the chicken. A hot pan is what gives you those lovely charred edges.
  • Pull the thighs at 75°C/ 165°F and they stay tender and juicy.
  • Reduce the Chipotle quantity if you prefer a mild spice level.
  • Freeze in batches to enjoy throughout the month.

Serving Suggestions

Honestly this chipotle chicken goes with just about everything, but a big loaded bowl is where it shines. I love spooning it over rice with a cooling side like my dill potato salad to balance the heat, or using ait as the protein source for my dense bean salad would work really well. For lazy nights, grab your prepped chipotle chicken from the freezer, whack a pouch of rice into the microwave, and serve with any frozen veg you have on hand.

For something with a bit more edge, my buffalo sweetcorn chorizo makes a cracking foundation to pile the sliced thighs on top of. Add guac, a squeeze of lime and you’re sorted.

Ingredients

  • 1 kg boneless, skinless chicken thighs
  • ½ lime, juice and zest
  • 1 tsp salt
  • 1 tsp white pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 100 g chipotle peppers in adobo sauce
  • 1 tbsp olive oil

Method

  • Pat the chicken thighs dry and add to a large bowl.
  • Blend the lime juice and zest, salt, white pepper, smoked paprika, garlic and onion granules, cumin, oregano, chipotle in adobo and olive oil to a smooth marinade.
  • Pour over the chicken, turn to coat, cover and marinate at least 1 hour, ideally overnight.
  • Heat a griddle pan or BBQ to medium-high until very hot.
  • Shake off excess marinade and cook thighs 5 to 6 minutes each side until charred and cooked through (75°C, no pink).
  • Rest 5 minutes, then slice to serve.
