Open a normal caesar prep two days later and you’re greeted by sad, soggy leaves. This meal prep caesar salad skips the lettuce entirely, so juicy mustard-brushed chicken, crispy bacon, roasted courgette and chickpeas in a creamy yogurt dressing stay crisp for five whole days. Why you’ll love this recipe

  • Actually lasts all week: No lettuce to wilt, so it stays crisp for a full 4 to 5 days.
  • Seriously high protein: Around 43g per serving from the chicken, chickpeas and yogurt dressing, no pasta needed.
  • Budget-friendly: Chickpeas bulk it out cheaply for five proper portions.
  • Lighter dressing with great flavour: A cheeky anchovy (or a splash of worcester sauce) brings that classic savoury depth.

Ingredients For Meal Prep Caesar Salad

A few clever swaps keep this meal prep caesar salad cheap and sturdy:

  • Chicken breast: Mustard-brushed and seared for colour and juiciness.
  • Chickpeas: The budget hero that makes it filling and holds texture all week.
  • Streaky bacon: Roasted with the courgette for a smoky, salty crunch.
  • Fat-free natural yogurt: A lighter, higher-protein base for the dressing.

See the recipe card for full information on all ingredients and quantities.

Variations/ Adaptations

  • Want more greens? Add shredded romaine or kale just before eating.
  • No anchovy? A couple of teaspoons of worcester sauce does the same savoury job.
  • Fancy a change? Swap the chicken for leftover roast chicken or prawns.

Tips for the best result

  • Brush the chicken with mustard before frying for tang and better colour.
  • Cool everything fully before mixing, or it steams and turns soggy.
  • Drain and pat the chickpeas dry so they don’t water down the dressing.

Serving Suggestions

Hearty enough on its own, but it’s lovely next to a scoop of potato salad or with extra roast chicken piled on for hungrier days. Batch it alongside the rest of your weekly prep and everything just keeps happily in the fridge.

Leftover Storage and Reheat Instructions

Refrigerator: Airtight container, up to 5 days.

Freezer: Skip it, the yogurt dressing splits and the cucumber goes watery.

Reheat: None needed, eat it cold. Warm just the chicken for 30 seconds if you prefer.
