This creamy and spicy homemade vegetable ramen is delicious and easy to make. You can cook everything into the one pot and this ramen recipe is ready in 30 minutes.

Ingredients

  • 250 g chestnut mushrooms (ยฃ0.80)
  • ยฝ jar red Thai paste (ยฃ0.95)
  • 1 tin of coconut milk (ยฃ0.69)
  • 225 g rice noodles (ยฃ0.85)
  • 3 carrots,spiralized (ยฃ0.30)
  • 160 g tenderstem broccoli (ยฃ1.00)
  • 200 g beansprouts (ยฃ0.50)
  • 1 lime (ยฃ0.80/4)=(ยฃ0.20)
  • Handful coriander (ยฃ0.39)
  • A few chillies (ยฃ0.45)

Cupboard Essentials

  • 1 tbsp coconut oil
  • 1.5 litre vegetable stock

Method

  • Start by adding a tbsp of olive oil/coconut oil to a large saucepan/wok on high heat. Add the chopped mushrooms into the pan & leave to brown.
  • Once browned, add the thai paste and gently fry for around a minute before slowly combining the coconut milk and vegetable stock. Reduce to a low simmer for 15 minutes.
  • After this period, add the tenderstem broccoli and spiralised carrots to cook for the final 10 minutes.
  • 2 minutes before the end of the timer, add the beansprouts & noodles and the juice of half a lime.
  • Garnish with lime wedge, coriander & chopped chilli.
