This gammon joint in air fryer requires just three main components to achieve that sticky, sweet finish.
You can easily adapt this gammon joint in air fryer to suit whatever ingredients you have in your cupboard.
Preheat your airfryer to 340°F (170°C) for 5 minutes.

3. After 30 minutes remove the gammon from the foil and using a sharp knife, carefully remove the rind/outer layer, from the gammon (Image 3).
4. Once the outer layer is removed there will be a remaining thin layer of fat covering the gammon (Image 4).

5. Now score the fat cap with a knife in a cross-hatch pattern and cover with the dressing ensuring all the crevices are filled (Image 5).
6. Leaving the foil peeled back, pop the gammon back into the airfryer and cook for 15 – 20 minutes at 360°F (180°C), or until golden and lightly crispy on the outside. Check the gammon to ensure the topping isn’t burning. If any parts are browned already, cover these with the foil (Image 6).

7. After this time, remove the foil and check the internal temperature which should be 145°C (62°) (Image 7).
8. Rest for 10 minutes before slicing (Image 8).

If you have leftover ham consider making one of these yummy recipes and add some chopped ham: High Protein Cottage Cheese Pasta, Roasted Brussels Sprout Pasta or Crispy Smashed Broccoli.
The cook time for your gammon joint in air fryer will vary depending on the size of your joint (whether it’s a small gammon joint or a larger 2kg piece). It’s always good to have a meat thermometer to ensure the ham has reached an internal temperature of 145°F / 62°C.
| Gammon Joint Size | Initial Cook | Glaze & Finish | Notes |
| 500g | 25 min at 340°F (170°C) | 15–20 min at 360°F (180°C) | |
| 750g | 30 min at 340°F (170°C) | 15–20 min at 360°F (180°C) | Most common supermarket size |
| 1kg | 35 min at 340°F (170°C) | 15–20 min at 360°F (180°C) | Great for meal prep; my preferred size |
| 1.5kg | 45 min at 340°F (170°C) | 15–20 min at 360°F (180°C) | |
| 2kg | 60 min at 340°F (170°C) | 15–20 min at 360°F (180°C) | Check if it fits in your air fryer basket first |
Resting time: A general rule of thumb for the resting time of an airfryer gammon is 10 minutes, but if you cook anything above 1.5kg, leave for 15 minutes before slicing.

Leftovers from this gammon joint in air fryer are perfect for meal prep.
Refrigerator: Refrigerate for up to 7 days in a sealed container.
Freezer: Freeze for up to 3 months. Once you know how to cook gammon in bulk, you can freeze slices for easy future meals. Defrost in the fridge overnight.
Reheat: Ham is often best served cold, but if you want to reheat, place slices in the microwave for 30-second increments. Great for adding to Easy Air Fryer Frittata.

This may have happened if your foil wasn’t completely covering the ham. It also happens if you cook it for too long. If you are cooking a small gammon joint, check the table above to ensure you don’t overcook it.
Yes, and you don’t even need to boil it first! The foil-wrap method effectively steams the meat inside the basket, meaning you can skip the big pot of boiling water entirely.
Some people like to do it as it reduces the saltiness of the ham, however, I don’t feel the need to do that as the salty aspect is why so many people love it!
When learning how to cook a gammon joint, the most important rule is internal temperature. When the thermometer reaches 145°F / 62°C, the ham is safe to eat and juicy.
Try this with my Golden Chickpea Soup, Celeriac Soup and Tomato & Lentil Soup to make a delicious and filling meal.
