This green goddess sandwich is one of those recipes that looks impressive but takes no time at all. It’s packed with 50g of protein, 9g of fibre, and comes in at 470 calories, making it one of my favourite high protein lunch ideas when I want something that I can take with me on the move, without sacrificing on flavour or nutrients.

Ingredients For Green Goddess Chicken Sandwich

  • 0% fat Greek yoghurt: This is the base of the dressing and it provides the creaminess to the dressing without adding the calories that mayo or oil adds.
  • Cooked chicken breast: Shredded so it absorbs every bit of that green goddess dressing. Leftover rotisserie chicken works brilliantly here if you want to use up any.
  • Fresh spinach and basil: The duo that gives this sandwich its signature green colour and fresh, herby flavour. Don’t skip the blanching step if you want it to stay green – sorry I’m like a broken record!

Variations/ Adaptations

  • Swap the protein: Tinned tuna or browned turkey mince work really well in place of chicken if you fancy a change. If you want to make it cheaper you could also try it with my shredded chicken recipe and buy your chicken breasts uncooked.
  • Go wrap style: the green goddess filling works brilliantly in a whole wheat wrap with some extra cucumber and a handful of rocket. Or you could make it like those viral new york caesar wraps and add lettuce and croutons into the mix.

How to make a Green Goddess Chicken Sandwich

Step 1: Shred your chicken.

Step 2: Blanch the spinach and fresh basil.

Tips for the best result

  • Pls don’t skip the ice bath after blanching. It stops the cooking immediately and keeps the spinach and basil that gorgeous, vibrant green.
  • Squeeze out as much water as possible from the blanched greens before blending, otherwise the dressing will be too loose and watery.
  • Shred the chicken as finely as you can. The finer the shred, the better it takes on the dressing and the easier it is to eat without everything falling out.
  • If you’re making this for meal prep, store the filling and the bread separately. Assembling it fresh keeps everything from going soggy.

Leftover Storage and Reheat Instructions

Refrigerator: Store the green goddess chicken filling in a sealed container for up to 4 days.Keep the bread separate and assemble the morning of.

Freezer: I don’t recommend- the yoghurt-based dressing doesn’t freeze well and the texture of the filling changes significantly once thawed.

This green goddess sandwich is creamy, vibrant, and packs 50g of protein per serving.

Ingredients

For The Green Goddess Chicken

  • 200 ml 0% fat greek yogurt
  • 3 cooked chicken breasts approx 360g
  • 100 g spinach
  • Handful of fresh basil
  • 1 clove of garlic
  • Juice of half a lemon

For The Sandwich

  • 1 cucumber, thinly sliced
  • Bunch of spring onions, thinly sliced
  • 6 slices of high protein bread 2 slices per sandwich

Method

  • Shred the chicken into thin/small pieces, either using 2 forks or a hand mixer.
  • Blanch the spinach and fresh basil in boiling water for 30 seconds. Then immediately add to an ice bath. This keeps it vibrantly green in the fridge.
  • Remove from the water and squeeze out the excess liquid.
  • Place the blanched spinach and basil into your blender/food processor, along with the Greek yoghurt, lemon juice, garlic and a pinch of salt and pepper. Blend until smooth, then pour over the shredded chicken.
  • Add a layer of cucumber onto a slice of bread, then add the green goddess mix, then a layer of spring onion. Close with the other slice of bread and wrap with parchment paper.

Notes
