Ingredients
2baby gem lettuces(£0.65)
2chicken breasts-diced(£3.00/2)=(£1.50)
1white onion(£0.09)
300gfrozen sliced peppers(£0.87/2)=(£0.44)
1avocado(£1.12/2)=(£0.56)
Handful of cherry tomatoes(£0.48)
Handful of coriander, optional(£0.50)
Cupboard Essentials
½tspchilli powder
2tspsmoked paprika
½tsporegano
½tspcumin
½tspcayenne pepper
1tbspcoconut oil
Salt & Pepper
Method
Melt the coconut oil in a mug for 30 seconds and add the fajita seasoning to the liquid.
Dice two large chicken breasts and add them to a pan, pouring the oil mix onto the chicken and stirring.
Gently fry the chicken with the sliced onion for 10 minutes and then add the frozen peppers to the pan.
Meanwhile, mash the avocado and slice up the tomatoes. Season with salt and pepper.
Lay out the ‘lettuce boats’ and pop the chicken/pepper mix into them. Add the avocado and tomato and pop on some coriander.
