Making properly crispy roast potatoes in ninja air fryer drawers can be hit or miss, but this method works every. single. time! These are so good with my Roasted Turkey Legs too.

Why you’ll love this recipe

If you think air fryers can’t do Sunday roasties, prepare to have your mind changed!!

  • Crunchy: By getting the oil super hot in the drawers first, you get that crust we all love. Ninja air fryer roast potatoes rival the texture of The CRISPIEST Roast Potatoes but way faster.
  • Feeds everyone: Most air fryer recipes are tiny, but using both baskets of the Ninja Dual means we can cook 1.5kg of potatoes at once. It’s a lifesaver when you’re feeding multiple people, like my Easy Devilled Sausages which actually pairs perfectly with the Ninja roast potatoes.
  • Easy flavour: I use a simple rosemary salt right at the end so the herbs don’t burn during the high-heat blast. It’s such an easy way to get loads of flavour in your Ninja airfryer roast potatoes without the bitterness.

In case you’ve got a big bag of potatoes to get through, you should try my Delicious Boulangere Potatoes, Crispiest Diced Potatoes in Air Fryer {Fluffy Center!}, or Parmentier Potatoes (Garlic and Herb Roasted Potatoes).

Ingredients

Overhead view of Maris Piper potatoes, a bunch of fresh rosemary, a small cup of salt, and a metal measuring cup with oil arranged on a light green surface. Labels identify each ingredient.

You don’t need much for these Ninja airfryer roast potatoes, but picking the right potato type is actually super important.

  • Maris Piper: These are the standard for roasting because they’re floury and fluff up perfectly when you shake them. You can also use King Edwards or Roosters, like I often do for my Cheesy Mashed Potatoes Recipe.
  • Rapeseed oil: You need an oil with a high smoke point that can handle the 200°C heat and the Max Crisp setting without burning. It helps you get that deep golden colour.
  • Fresh rosemary: I love chopping this super finely to make a finishing salt that clings to the hot potatoes. Dried rosemary works, but fresh gives the best flavour on roast potatoes ninja air fryer batches.

Variations/ Adaptations

There are plenty of ways to tweak this recipe depending on what you are serving it with.

  • Garlic infusion: You can add a tsp of garlic powder to the salt mix at the end rather than fresh garlic which would burn easily with the roast potatoes in a ninja air fryer. And if you love garlic, these Amazing Air Fryer Steak Bites with Garlic Butter are waiting for you!
  • Thyme swap: Switch the rosemary for fresh thyme leaves for a slightly earthier, more subtle flavour. This pairs really well with hearty dishes like my Easy Sausage Tray Bake with Vegetables.
  • Lemon & parsley: For a fresher, summery lift in your Ninja airfryer roast potatoes, toss them in lemon zest and chopped parsley right before serving.

How to make Crispy Ninja Airfryer Roast Potatoes

A cutting board with a knife and chopped potato pieces, a metal bowl containing potato peels, and an empty pot with a blue handle.

Step 1: Peel the potatoes and slice them into quarters or halves.

A hand pours salt from a glass jar into a pot of boiling, peeled potato chunks on a white surface. Beside the pot is a bowl filled with potato peels, ready for the next step in meal prep.

Step 2: Place the potatoes in a large pot, cover with cold water, and add a generous amount of salt before boiling for 12-15 minutes.

Two empty black air fryer baskets with handles are placed side by side on a white surface. Each basket contains a small amount of oil.

Step 3: Divide the 6-8 tbsp of rapeseed oil between the two air fryer baskets and preheat them at 200°C for 5 minutes.

A metal colander filled with peeled and chopped boiled potatoes, placed on a light marble countertop.

Step 4: Drain the potatoes into a colander once they are fork-tender.

A metal colander filled with peeled and chopped boiled potatoes sits on a white surface. The starchy potatoes are ready for the next step in your delicious recipe.

Step 5: Shake the colander vigorously to rough up the edges of the potatoes, which helps them get crispy.

Step 6: Carefully tip the potatoes into the hot oil in the baskets and shake them to ensure they are fully coated.

Two air fryer baskets filled with golden brown roasted potatoes, some pieces crispier and darker than others, sit on a white surface next to a chopping board with chopped herbs.

Step 7: Air fry at 200°C for 15 minutes, rotate the potatoes, then switch to ‘Max Crisp’ for another 5-10 minutes until deep golden brown.

Step 8: Toss the hot potatoes in a bowl with flakey salt and the 1 tbsp of finely chopped rosemary before serving.

Tips for the best result

  • Don’t be gentle after parboiling, give the potatoes a good shake in the colander to create those fluffy edges. That texture is what turns into the crunchy bits we all love.
  • If you decide to only cook half the batch, I would still split the potatoes across both baskets. The more room they have to air fry without touching, the crispier the result. This makes a huge difference when learning how to cook roast potatoes in a ninja air fryer.
  • Don’t skip the 5-minute oil preheat. Dropping the potatoes into hot oil ensures they don’t stick or get greasy. Just be careful!
  • Toss the Ninja airfryer roast potatoes in the rosemary salt the second they come out of the baskets. The heat helps it all cling to the skins. And do this after cooking, not before – or they’ll burn.

Serving Suggestions

Honestly, Ninja airfryer roast potatoes are versatile enough for a random Tuesday dinner but impressive enough for Christmas day. Once you know how to cook roast potatoes in an air fryer, they’ll be your go-to side.

Try them with:

Leftover Storage and Reheat Instructions

These air fryer roast potatoes are 100% best eaten fresh, but leftovers are still tasty.

Refrigerator: Let the Ninja airfryer roast potatoes cool completely before popping them in an airtight container in the fridge. They’ll be fine for about 3 days.

Freezer: You can freeze these after the parboil stage for a meal prep hack, but I wouldn’t freeze fully roasted ones. The texture just isn’t the same.

Reheat: Put them back in the air fryer on Max Crisp for 4-5 minutes to wake up the texture. Please don’t microwave them or they’ll go sad and soggy! Once they’re crispy again, serve them with this Easy Caramelised Onion Gravy.. yum!

Recipe FAQs

Why are my air fryer potatoes not crispy?

This usually happens if the basket is overcrowded or the potatoes were too wet when they went in. Make sure to drain them thoroughly in the colander and use the Max Crisp setting to finish. When you want to learn how to cook roast potatoes in Ninja air fryer, those are the biggest things that help.

Do I have to parboil potatoes for the air fryer?

Yes, parboiling removes excess starch and creates those fluffy edges that turn into crispy bits when you roast potatoes in air fryer. Without parboiling, the inside won’t be fluffy by the time the outside browns. But these air fryer roast potatoes Ninja style are still sooo easy, and my go-to when I want proper crunch without using the oven.

Can I use olive oil to roast potatoes in the airfryer?

I don’t recommend extra virgin olive oil as it can smoke at these high temperatures. Regular olive oil is okay, but rapeseed or avocado oil gives the best high-heat results.

What is the best potato for Ninja airfryer roast potatoes?

You want a floury variety like Maris Piper or King Edward. Waxy potatoes won’t fluff up on the edges and will result in a tougher, less pleasant texture.

How long to roast potatoes in ninja air fryer?

Wondering how long to cook roast potatoes in air fryer ninja drawers? It’s usually around 20-25 minutes total. I roast them for 15 minutes at 200°C, then switch to Max Crisp for the final 5-10 minutes. Learning how to make roast potatoes in ninja air fryer is really just about timing that final blast to get them golden brown. You can see my full method below.
