This green goddess sandwich is one of those recipes that looks impressive but takes no time at all. It’s packed with 50g of protein, 9g of fibre, and comes in at 470 calories, making it one of my favourite high protein lunch ideas when I want something that I can take with me on the move, without sacrificing on flavour or nutrients.

Step 1: Shred your chicken.

Step 2: Blanch the spinach and fresh basil.

Step 3: Combine the ingredients for your green goddess dressing in blender/ food processor.

Step 4: Combine with the shredded chicken.

Step 5: Layer your sandwich filling.

Step 6: Wrap in parchment paper and slice in half!

Refrigerator: Store the green goddess chicken filling in a sealed container for up to 4 days.Keep the bread separate and assemble the morning of.
Freezer: I don’t recommend- the yoghurt-based dressing doesn’t freeze well and the texture of the filling changes significantly once thawed.
