Meet the halloumi peri peri salad that survives a full work week in the fridge without going soggy. Since my hot honey halloumi bowls went pretty crazy on socials, I thought I’d do something similar, but with a Nando’s-inspired twist. Loaded rainbow veg 37g of protein per serving and so much flavour.

Step 1: Arrange halloumi, vegetables and paprika chickpeas on a tray with oil.

Step 2: If you don’t have enough room on one tray, separate the chickpeas.

Step 3: Whisk/blend the dressing ingredinets.

Step 4: Pour over your cooled salad ingredients.

Step 5: Divide into meal prep containers.

Step 6: Top with halloumi and drizzle with hot honey.

This one is a full meal on its own, but it plays nicely with a bit of variety across the week. If you’re batching salads with a partner, or cooking for a family, my meal prep Caesar salad makes a great second box so you’re not eating the same lunch five days running.
For an afternoon pick-me-up I’ll stash a couple of protein balls next to it, or reach for my date energy balls when I want a fibre-packed sweet treat to round things off.
Refrigerator: store the roasted salad base in an airtight container for up to 4 days, with the dressing in a separate pot and the hot honey saved for serving.
Freezer: I wouldn’t freeze this one. The yoghurt dressing splits and the raw tomato and onion go mushy once thawed.
Reheat: it’s lovely cold straight from the fridge, or warm the roasted base for a minute in the microwave, then add the fresh veg, dressing and hot honey after.
Yes, it’s made for it. Roast the base, keep the dressing separate, and portion into containers for up to four days.
Around four days in the fridge, so I like to prep it on the Monday and enjoy it throughout the work week.

Yes, the whole recipe is veggie as written, so it’s a solid high protein option if you don’t eat meat.
I don’t recommend it, as the yoghurt dressing and raw veg don’t hold up well once frozen and thawed.
Absolutely, it’s delicious cold from the fridge, which is what makes it such an easy grab-and-go lunch.
Any you like. Mild keeps it family-friendly, hot brings the heat, and either way the yoghurt mellows it into a creamy dressing.
