These Halloumi Burgers are so easy to make. Imagine the golden fried halloumi, charred peppers, beef tomatoes and a drizzle of tzatziki on warm ciabatta rolls. Definitely one of my favorite veggie burger recipes!

These Halloumi Burgers are so easy to make. Imagine the golden fried halloumi, charred peppers, beef tomatoes and a drizzle of tzatziki on warm ciabatta rolls. Definitely one of my favorite veggie burger recipes!

Ingredients

  • 225 g halloumi (£1.49)
  • Sweet chilli sauce (£0.55)
  • 500 g (1 pot) greek yogurt (£0.69)
  • 1 beef tomato (£0.48)
  • 3 mixed peppers (£0.91)
  • 4 ciabatta rolls (£0.89)
  • Wild rocket (£0.48)
  • ½ cucumber (£0.54)
  • 1 lime (£0.15)

Cupboard Essential

  • 1 tbsp olive oil
  • Salt

Method

Preheat oven to 200°C

  • First slice up the peppers and place in oven on baking tray with a little olive oil. Season with salt and set timer for 40 minutes.
  • Meanwhile make the tzatziki by combining the yogurt, grated cucumber, the juice of half a lime and a generous pinch of salt.
  • Slice the halloumi into thin pieces and fry each side with a little olive oil for a couple of minutes to brown.
  • When the peppers have 10 minutes left, pop the ciabatta roll in the oven.
  • Slice the beef tomato in rounds.
  • Once the peppers have charred nicely. Assemble the burger in this order (I spent way too long thinking of this, but it’s essential so just roll with it). Bottom ciabatta bun, teaspoon of sweet chilli, roasted pepps, halloumi, tomato, tzatz, rocket, top bun (top fun).
