  • Brussel sprouts: I use fresh sprouts rather than frozen as it’s really hard to get a caramelised, crispy exterior with frozen veg. To make the best balsamic honey brussel sprouts, you want to avoid excess moisture at all costs!

How to make Crispy Honey Balsamic Brussel Sprouts

Preheat oven to 200°C/405°F.

  1. Rinse the brussel sprouts in a colander (Image 1).
  2. Using a sharp knife, remove the root end of the brussel sprouts, then slice them in half (Image 2).

3. Place the cut brussels sprouts in a baking dish, add olive oil, salt and pepper, and toss to combine (Image 3).

4. Cover the baking dish with foil and bake in the oven for 20 minutes (Image 4).

5. While the brussel sprouts bake, chop the chilli’s and garlic (Image 5).

6. Combine the chopped chilli’s and garlic with balsamic vinegar, honey, and a bit of salt and pepper, then mix to combine (Image 6).

7. Once the brussel sprouts have baked for 20 minutes, remove them from the oven and remove the foil, thend pour the glaze over the sprouts. Mix to coat all the sprouts (Image 7).

8. Place the brussel sprouts back into the oven, uncovered, to bake for another 10-15 minutes (Image 8).

  • Trim the tiny bit of stem and wilted leaves off the honey balsamic brussel sprouts before roasting.

Refrigerator: To store these oven roasted brussel sprouts, let them cool completely before transferring to an airtight container. They will last in the fridge for up to 3-4 days.

Freezer: I honestly do not recommend freezing roasted sprouts, as they tend to become mushy upon thawing.

Can you use frozen brussel sprouts? 

I use fresh sprouts for honey balsamic brussel sprouts rather than frozen as it’s really hard to get a caramelised crispy exterior with frozen. They release a lot of moisture which stops this process from happening.

Why are my roasted brussels sprouts soggy? 

You may have overcrowded them in the pan. This means that they release a lot of steam onto each other whilst they roast which prevents crispiness.

Do I need to boil my brussel sprouts before roasting them? 

No need for boiling! This would also prevent the crispy exterior that we’re after compared to other brussel sprouts recipes, due to too much moisture being in the tray.

Can you roast brussel sprouts in the air fryer? 

Absolutely! Cook them for 10-12 minutes at 180°C/355°F, adding the brussel sprouts balsamic honey glaze after 5 minutes.

Can I make balsamic brussel sprouts less spicy?

Yes! Unlike some brussel sprout recipes, the chilli is optional. You can skip it for a kid-friendly balsamic brussel sprouts version.

These honey balsamic brussel sprouts are roasted until crispy and tossed in a sticky glaze. The ultimate easy holiday side dish!

Ingredients

  • 500 g brussel sprouts (£0.70)
  • 2 fresh chillies, finely chopped (£0.55)
  • 2 cloves of garlic, minced (£0.39)
  • Zest of half a lemon (£0.30)

Cupboard Essentials

  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • Salt
  • Pepper

Method

  • Preheat oven to 200°C/ 405°F.
  • Slice of the root end of the Brussel sprouts, then slice them in half. Add to a baking tray with 2 tbsp olive oil and a generous pinch of salt and pepper. Toss to combine, then cover with foil and pop in the oven for 20 minutes.
  • During this time, in a bowl, combine the chopped fresh chillies, garlic, balsamic vinegar, honey and a pinch of salt and pepper.
  • After 20 minutes, remove the foil and pour on the glaze. Stir to combine and finish in the oven for 10-15 more minutes, or until golden and crispy.
  • Top with lemon zest and a crack of black pepper before serving.

Notes

  • Trim the small stems and any wilted leaves before roasting.
  • Coat evenly with oil and spread them out to ensure maximum crispiness. 
  • No need to stir or flip the honey balsamic Brussels sprouts on the baking sheet; simply let them cook and caramelize.
  • Consider doubling the honey balsamic glaze to use with other roasted vegetables throughout the week.
