I used runny, chunky peanut butter. To ensure that the peanut butter was the right consistency, I moved the jar around to see if the peanut butter moved. If you use a firm peanut butter, it’ll be a different end result that’s less gooey – this is a matter of preference though!

Start by heating the chocolate in a glass bowl placed over boiling water until melted, stir with a spatula to ensure all the chocolate has melted.

The chocolate does add sugar, but seeing as we aren’t adding too much, I’d still say this recipe is balanced and healthy. You can switch to dark chocolate to add nutrients to make it even healthier.
How do you melt chocolate for rice cakes?
I use a bain-marie method of heating the chocolate in a bowl over boiling water. This is a great method to prevent any chocolate burning. You can use the microwave, but make sure you check/stir the chocolate every 15 seconds until melted to ensure nothing burns.
