These chocolate covered rice cakes only take 10 minutes to whip up, require only 4 ingredients and are so so tasty. I’ve seen many viral tik tok cakes, but this is definitely one that you have to try!!

We’ve all tried rice cakes with peanut butter – it’s the perfect easy snack. We’ve all tried pre-made chocolate rice cakes – a delicious sweet treat. 

So how about going one step further and dunking that peanut butter rice cake in melted chocolate? Game changer.

Ingredients

Plain Rice Cakes
As each rice cake is a single serving, you want to buy the giant rice cakes so that the serving will be big enough. If you want to make this recipe healthier, you can buy wholemeal rice cakes. 

Peanut Butter
I used runny, chunky peanut butter. To ensure that the peanut butter was the right consistency, I moved the jar around to see if the peanut butter moved. If you use a firm peanut butter, it’ll be a different end result that’s less gooey – this is a matter of preference though! 

Milk Chocolate
Use either dark chocolate or milk chocolate for this rice cake with peanut butter recipe. 

Honey Roasted Peanuts
I think it’s the honey roasted peanuts that take this chocolate rice cakes recipe to the next level. It adds crunch, sweetness and saltiness.

How to make chocolate rice cakes with peanut butter (in 10 minutes!)

Start by heating the chocolate in a glass bowl placed over boiling water until melted, stir with a spatula to ensure all the chocolate has melted.

  1. Start you your rice cake conveyor belt!
  2. Spread a dollop of peanut butter onto the rice cakes, so they are evenly coated.

3. Then drizzle around 1.5 tbsp of the melted chocolate over each rice cake and spread with a spoon to cover the peanut butter.

4. Lastly, add a sprinkle of honey roasted nuts onto each cake

5. Pop in the fridge to set for an hour. Optionally serve with a sprinkle of flakey salt.

Tips and Tricks

  • Melt your chocolate taking care not to burn, preferably heating chocolate in a bowl, over a pan of boiling water. 
  • Place the rice cakes in the fridge for at least 15 minutes before serving to ensure the chocolate has set.
  • Add different toppings, such as your favorite nuts, raisins and jam.
  • Store the chocolate rice cakes in an airtight container in the fridge for up to 5 days, if they last that lon

Are chocolate covered rice cakes good for you?

Rice cakes are a healthy base to create a snack around. They’re low calorie and high volume – so when we top with peanut butter (healthy fats and protein), it is a balanced snack. The chocolate does add sugar, but seeing as we aren’t adding too much, I’d still say this recipe is balanced and healthy. You can switch to dark chocolate to add nutrients to make it even healthier.

How do you melt chocolate for rice cakes?

I use a bain-marie method of heating the chocolate in a bowl over boiling water. This is a great method to prevent any chocolate burning. You can use the microwave, but make sure you check/stir the chocolate every 15 seconds until melted to ensure nothing burns.

  • 100 g milk chocolate (£0.33)
  • 4 rice cakes (£1.00/10x4)=£0.40)
  • 4 tbsp peanut butter (chunky & runny ) (£1.50/6)=(£0.25)
  • 40 g honey roasted peanuts (£1.30/6)=(£0.22)
