Ingredients

The main ingredients that make this Whole Boiled Chicken recipe fantastic are the following:

Whole chicken ~ I love to buy a medium sized 1.5kg/3.3lb chicken as I just live with my partner so this is a good size for us to meal prep with. If youโ€™re a larger family, you can grab 2.5kg/5.5lb size chicken to yield a larger amount of chicken prep. Use the table below to ensure you adjust the cook time. 

Ginger & garlic ~ garlic and onion are usually the foundation to a good boiled chicken, however I also add a bit of ginger to add some zing. 

Chicken broth ~ if youโ€™re going all out, you can use your favourite bottled broth. I keep this recipe inexpensive though by using a good quality stock pot.

How to boil a whole chicken

  1. Step 1: Crush the garlic cloves by smashing the side of the knife into the cloves with the palm of your hand. Then slice the ginger using a large sharp chef’s knife (Image 1).

  1. Step 2: Place the chicken, garlic cloves, sliced ginger, onion, chicken stock, and soy sauce into an extra large stock pot (Image 2).

  1. Step 3: Add the lemon slices, dill, and peppercorns to the large pot with the chicken and other ingredients and bring the pot to a rolling boil over high heat (Image 3).

  1. Step 4: Once the contents in the pot come to a boil, reduce the heat to a simmer and for 50-60 minutes (Image 4).

  1. Step 5: Use a set of tongs to remove the chicken from the pot when the temperature reads 165ยฐF at the thickest part of the chicken and let the chicken rest on a cutting board or platter for at least 30 minutes (Image 5).

  1. Step 6: Once the chicken has cooled, debone the chicken and either shred or slice the meat (Image 6).

How long to boil a whole chicken 

The duration of boil time will depend on the size and weight of your chicken. Here’s a list of timings for the chicken boiling time per pound. 

  • Small chicken – 1.3kg/2.6lb = 40-50 minutes
  • Medium/ small chicken – 1.5kg/3.3lb = 60 minutes
  • Large chicken – 2kg/4.4lb = 75-80 minutes
  • Extra large chicken – 2.5kg/5.5lb= 1.5 hours- 1.75 hours 

Your timer should be set at the minute the water reaches a rolling boil. The water should be boiling gently. Use a lid to partially cover the pot. 

Check that your chicken has finished cooking by:

  • Using a meat thermometer at the thickest part of the chicken, which is the chicken thigh. It should register 165ยฐF/ 74ยฐC.
  • To double check, remove the chicken from the water and pierce a small hole in the chicken thigh. The juices should run clear. You donโ€™t want to do this a lot though as we want to let the chicken rest to have all the juices retained.

Tips for the best result

  • Be sure to let the chicken rest- this will lock in the juices, leading to the most tender boiled chicken.
  • Use high-quality stock for your poached whole chicken and add additional salt. This will ensure that the chicken is well seasoned.
  • Smash the garlic before adding it into the pot, this allows more garlic to infuse into the broth, which will flavor the chicken more.
  • Donโ€™t throw away the broth! Lots of flavour and collagen will be released into the broth, just pass through a sieve and store in an airtight container in the fridge.
  • Check the temperature of your chicken about 10 minutes before you think itโ€™s ready to make sure you donโ€™t overcook it. Your rolling boil may be too powerful which will reduce the cook time.

Leftovers 

Storage & reheat info – Store the shredded or chopped chicken in an airtight container for up to 4 days. Thatโ€™s why I love to whip this up on a Monday for a healthy source of protein for all of my lunches. 

How to freeze – Add to freezer-safe bags or an airtight container to prevent freezer burn. Freeze for up to 3 months!

How to reheat – Either incorporate the cooked chicken into your recipe of choice which would heat it up, or add to the microwave with a splash of stock or water for 1-2 minutes, depending on the quantity of chicken youโ€™re reheating. Sometimes I like to change up my leftovers by adding a sauce like this Tomato Basil Sauce.

How long does it take to boil a whole chicken?ย 

Depending on the size of your chicken, it will take from 45 minutes to 2 hours. Refer to my bullet points above for precise pound-to-cook-time ratio!ย 

Can I make this recipe with water instead of stock/broth?ย 

Yes you can, I would increase the salt by about 1 tsp though as you want to compensate for the reduction of seasoning. If youโ€™re low sodium, feel free to skip this though.ย 

Can I boil a frozen whole chicken without thawing it first?ย 

You can! Be sure to multiply the cook time by 1.5 to factor in the extra cooking time though. Use your thermometer as instructed to ensure the chicken is fully cooked.ย 

Can I add bones back in and reboil for more broth?ย 

Yes you can! This will add more flavor and nutrients into the broth. Some people love to roast their bones before adding back into the broth for even more flavor and colour.ย

Learn how to boil a whole chicken perfectly every time. Includes a cook-weight timetable and pro tips to get the most tender meat.

Ingredients

  • 1.5 kg whole chicken
  • 50 g ginger
  • 1 lemon
  • Handful of fresh dill
  • 8 cloves of garlic smashed
  • 1 onion sliced in half, skin left on
  • 1 tbsp whole peppercorns
  • 2 tbsp soy sauce
  • 1 ltr Chicken stock

Method

  • Place the chicken into a xx size pot. Add the ginger, lemon (sliced in half), garlic, onion, whole peppercorns, chicken stock and soy sauce.
  • Bring to a rolling boil, then reduce to a low simmer. Set your timer as soon as the broth comes to the boil. I like to set a timer to the cook time minus 10 minutes to check the temperature of the chicken. My chicken was 1.5kg/ 3.3lbs so I set a timer to 60 minutes, checking it at the 50 minute mark.
  • When the temperature reads 165ยฐF at the thickest part of the chicken (the thigh), using tongs to remove it from the pan.
  • Allow the chicken to rest for a minimum of 30 minutes, then shred and de-bone.

Notes

  • Donโ€™t throw away the broth, sieve and store!
  • Check the chicken 10 minutes before the cook time to make sure you donโ€™t overcook it.ย
