I love roasted corn in the summertime! With this recipe, you can create fire-roasted corn using a skillet any time of year! Plus the leftovers are perfect in my Creamy Shrimp and Corn Pasta for another great weeknight meal.

Frozen Corn
Using frozen corn is a great way to be able to make this dish affordably throughout the year.

Butter
I use butter for roasting corn on the stove because it lends better flavor than an oil.

Garlic
Garlic is one of my favorite flavors on roasted corn. It really takes this recipe from boring to bold!

Variations/ Adaptations

  • Vary the Flavors: Like I mentioned above, you can really use any flavors you like on this skillet corn. One of my favorite variations is to add the Mexican Street Corn flavors like feta, smoked paprika, and lime juice to really take this dish over the top!
  • Make it spicy: Add a little heat by adding some jalapeños.
  • Make it Vegan: If you are looking for a vegan side dish, you can sub out the butter in this dish with your favorite cooking oil or a vegan butter. Then this corn side dish would go perfectly with my Ultimate Vegan Roast Dinner.
  • Try using air fryer roasted garlic instead of garlic granules.

How to make Skillet Roasted Corn

Preheat oven to 200°C/400°F.

Step 1: Add your oil to a cast iron pan and heat over high heat.

Step 2: Pour the frozen corn into the hot skillet and evenly distribute across the pan.

Step 3: Place the pan of frozen corn into the oven for 20 minutes.

Step 4: Remove the pan from the oven and add the butter, sage, garlic granules, and salt and pepper. Stir to mix well.

Step 5: Place the pan back in the oven for another 20 minutes.

Step 6: After 20 minutes, garnish with lemon wedges and add an extra bit of salt and pepper.

Hint: Cast-iron skillets can be daunting to clean since you are not supposed to use soap. I like to use a steel-bristle brush for cleaning the pan really well without using soap.

Tips for the best result

  • Use a Large Skillet: The bigger your skillet is, the more the corn will be spread out and the heat can circulate around the corn, giving it more roasted caramelization flavor!
  • Preheat over a high heat to get a nice char.
  • Season generously with salt and pepper to balance the sweetness in the corn.

Leftover Storage and Reheat Instructions

Refrigerator: To store leftover corn in the refrigerator place it in a an airtight container and place it in the refrigerator for up to 5 days.

Freezer: To freeze your roasted corn, again, place it in an airtight container and then place it in the freezer for up to 3 months.

Reheat: Reheating roasted corn is easy. Just pop it in the microwave and cook in 15-20 second bursts, stirring in between until the corn is warmed through.

Recipe FAQs

Do you need to boil roasted corn before roasting it?

The great thing about this recipe is you can just dump the frozen corn into the skillet and start cooking. No boiling is necessary.

Do I need to put foil on the roasted corn?

You do not need to use foil for this recipe. As a matter of fact, it will impede the caramelization if you use foil in the oven.

Ingredients

  • 50 g butter
  • 800 g frozen corn
  • Handful of fresh sage
  • 1 lemon sliced into wedges to serve
  • Cupboard Essentials
  • 1 tbsp olive oil
  • 1 tsp garlic granules
  • Salt
  • Pepper

Method

  • Preheat oven to 200°C/ 400°F.
  • Preheat olive oil over high heat in a skillet. Once hot, pour the frozen corn into the pan. Evenly distribute across the pan and pop in the oven for 20 minutes.
  • After 20 minutes, add the butter, sage, garlic granules and a generous crack of black pepper and salt.
  • Pop back in the oven for a further 20-25 minutes or until the corn caramelises and lightly chars in parts.
  • Top with lemon wedges, a generous sprinkle of black pepper, and a pinch of salt. Serve up and enjoy!

Notes

Make sure you use a large enough pan so your corn roasts and doesn’t steam.
