Spring rolls are always a go-to in my order for a Chinese, so why not make these air fryer spring rolls from scratch. No deep frying necessary, a deliciously seasoned filling and itโ€™s much more affordable too.

Spring Rolls vs Egg Rolls

So what exactly is the difference between a spring roll and an egg roll? Let me list out the main differences:

Spring Rolls

Spring rolls have thin wrappers made of rice paper or wheat, filled with fresh or stir fried vegetables, sometimes shrimp or pork. 

Egg rolls

The clue is in the name- egg rolls use a thicker, egg-based wrapper, filled with cooked, heavily seasoned ingredients like cabbage and pork or chicken. This gives them a Always deep-fried, bubbly, crunchy exterior.

The main ingredients that make this Air Fryer Spring Roll recipe fantastic are the following:

Chicken mince
I love to use chicken mince for my air fry spring rolls as itโ€™s lean yet still delicious. Chicken pairs well with oyster sauce and umami packed ingredients. You can also substitute with turkey mince, pork of beef mince though if you prefer. 

Oyster sauce
A great ingredient which is a shortcut to well-seasoned, balanced meat. Itโ€™s sweet, salty and so rich in flavor so you donโ€™t have to worry about your filling lacking a punch. 

Fish sauce
An additional hit of umami. If you leave this out, add an extra splash of soy sauce instead. 

Stir Fry vegetable mix
My stir fry mix included peppers, some cabbage and bean sprouts. The perfect combo for the best texture and colour with the filling. 

Spring roll wrappers
You can find these in the frozen section of larger grocery stores or in your local asian supermarket.

Variations/ Adaptations

Substitute spring roll wrappers for egg roll wrappers, wonton wrappers, rice paper wrappers. This is a matter of preference. 

Substitute chicken for pork, prawns/shrimp,  or vegetables. Vegetable spring rolls often contain a cabbage filling, I love using Chinese leaf when sauteing cabbage with Asian flavors so Iโ€™d highly recommend including that in your list of veggies. 

Other fillings you can use:  you could mix up the flavor of the filling by adding a peanut sauce. This will completely mix up the flavor and texture. Add fresh herbs such as Thai basil or fresh coriander. 

How to cook spring rolls in the air fryer 

  1. Add vegetable oil, garlic, ginger, and chilies to a frying pan and fry for two minutes (Image 1).
  2. Add the chicken mince to the pan, season with salt and pepper, and fry over high heat for 5 minutes (Image 2).

3. Next, add stir fry veggies, oyster sauce, fish sauce, soy sauce, and spring onions to the frying pan and continue to fry for another 3-4 minutes (Image 3).

4. Remove the ingredients from the pan and set aside to cool for 5 minutes (Image 4).

5. Once cool, place 2 tablespoons of the chicken and vegetable mixture 2 inches from the corner of the spring roll wrapper and spread it to about 2 inches long (Image 5).

6. Begin to roll the wrapper with the filling inside until you are halfway across the wrapper (Image 6).

7. Fold the top and bottom rolled edges into the center to form a parcel (Image 7).

8. Wet your finger and trace along the edge of the point (Image 8).

9. Finish rolling the spring roll (Image 9).

10. Spray the air fryer basket with oil. Place the spring rolls into the air fryer basket and spray the tops of the spring rolls with oil. Air fry for 12 minutes at 200ยญยฐC/405ยฐF (Image 10).

Tips for the best result

  • Ensure that you cook off all of the excess moisture released when cooking the vegetables and chicken. This prevents the wrappers going soggy.
  •  Donโ€™t overfill the wrappers, this will make them harder to fold.
  • Serve with your favorite dipping sauce.
  • Allow the filling to cool by placing on a plate for 5 minutes.
  • Before assembling/ placing the spring roll in air fryer, taste the filling once ready to adjust seasoning if necessary.

Make Ahead Instructions

I love to make the filling ahead of time if Iโ€™m making these spring rolls in the airfryer. Simply follow the steps to make the filling and ensure all the moisture is cooked off, then place on a plate and cover with cling film. 

Once cool, pop in the fridge and remove when youโ€™re about to cook. The fun part is also the assembly and making the wrappers into rolls, so I like to get my friends/family involved with this part. 

If you want to prepare the whole spring roll, follow all of the steps and then add them to a plate with cling film, or a zip lock bag for the freezer if youโ€™re making it really ahead of time. 

Serving Suggestions

Serve with a protein such as these: chicken mince stir fry recipe, soy garlic chicken, air fryer salmon bites, air fryer steak bites.

A more filling pairing, such as these carbs: Singapore fried rice, vermicelli noodles, gochujang noodles, salt and pepper chips, or yaki udon

Leftover Reheat and Storage Instructions

I believe that this dish is best made fresh to get the best texture and consistency with the pan sauce. 

The best flounder recipes involve cooking flounder to the perfect temp/not overcooking. So by reheating in the microwave/or in the pan, we do risk over cooking, as itโ€™s already finished cooking before. 

That being said, if you donโ€™t mind a slightly overcooked flounder, you can keep in the fridge for up to 2 days

To reheat, I would reheat over a medium high heat with an additional 100ml of boiling water. Once the sauce has thickened and the flounder is heated through, serve with some additional fresh herbs. 

FAQ’s

Are rice paper and wonton wrappers the same?ย 

No, rice paper is made from rice flour and tapioca, fresh or fried spring rolls. Wonton wrappers are made from wheat flour and eggs, are thicker, and are primarily used for dumplings or egg rolls.


Why arenโ€™t my spring rolls crispy?ย 

The mixture may have been too soggy or you may need to continue to cook for a little longer. Ensure that you spray generously/evenly with oil.ย 

Why do my spring rolls fall apart when air frying?ย 

Make sure that you seal the air fryer spring rolls with a dab of water and ensure that they are sealed tightly. This prevents them from falling apart. It also might happen if you overfill your rolls.

Are these spring rolls gluten free?ย 

It depends whether your wrappers are made out of rice paper or wheat, so adjust if necessary. The soy sauce and oyster sauce will have to also be subbed for a gluten free version.ย

Ingredients

  • 15 spring roll wrappers (ยฃ2.10)
  • 4 spring onions, finely chopped (ยฃ0.65)
  • 300 g stir-fry vegetable mix (ยฃ1)
  • 500 g ground chicken (ยฃ2.50)
  • 3 red chillies, finely chopped (ยฃ0.55)
  • 50 g fresh ginger, peeled and finely chopped (ยฃ0.30)
  • 4 cloves of garlic, finely chopped (ยฃ0.39)

Cupboard Essentials

  • 2 tbsp vegetable oil
  • 4 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 2 tbsp soy sauce

Method

  • To a frying pan, add the vegetable oil, chillies, ginger and garlic. Fry for two minutes, then add the chicken mince. Season with salt and pepper and fry over a high heat for 5 minutes.
  • Next, add the stir fry mix, oyster sauce, fish sauce, soy sauce and spring onions. Continue to fry for 3-4 minutes, or until all the moisture is cooked out. Taste to adjust the seasoning if necessary.
  • Pour on a plate and allow to cool for 5 minutes.
  • Place two tbsp of the chicken mixture around 2 inches from the corner of the wrapper. Fold the bottom edge over the filling, then roll up halfway.
  • Fold the left edge and right edge into the center to form a parcel, then with a wet finger, trace along the edge. Fold the top edge over to tightly seal.
  • Spray your airfryer basket with oil, then add 5 spring rolls in. Spray the top of the spring rolls with oil and cook for 12 minutes at 200ยฐC/405ยฐF.

Notes

  • Make sure to cook off any excess moisture from the vegetables and chicken to avoid soggy wrappers.
  • Avoid overfilling the wrappers, as this can make them difficult to fold.
  • Pair with your favorite dipping sauce when serving.
  • Let the filling cool for about 5 minutes on a plate before using.
  • Taste the filling before assembling or placing the spring rolls in the air fryer to adjust the seasoning if needed.
