We’ve got mini meatballs, cavolo nero, two kinds of beans & the most delicious spicy tomato broth. A few key ingredients make this beef minestrone soup as good as it is:

  • Beef mince (20% fat): Go for 20% fat here, not lean mince. Higher fat content gives you juicy meatballs and leaves some rendered fat behind in the pan, and that rendered fat is where all the flavour of this minestrone with meat comes from.
  • Cavolo nero: Cavolo nero holds up in hot broth in a way that spinach just doesn’t, which is why it’s my green of choice for this minestrone soup with ground beef. It adds a rustic, Italian feel and stays pleasantly chewy rather than dissolving into the broth. Can’t find it? Curly kale is the closest swap, and I also use it in my Creamy Green Risotto with Crispy Bacon and Mushrooms.
  • Ditali pasta: Short, stubby, and exactly the right size to scoop up with a spoonful of broth and beans. Macaroni or any small pasta shape works fine if ditali isn’t available.

Variations/ Adaptations

This beef minestrone soup is easy to make your own:

  • Make it milder: Leave out the cayenne and use a standard mild Italian herb blend instead. Still a really solid minestrone soup with meat, and much more approachable for kids. Try this Creamy Tomato Basil Bisque for a similar flavor profile.
  • Switch the beans: White and pinto beans are my go-to but kidney beans, butter beans, or cannellini all work well in this minestrone soup recipe with ground beef. Cannellini in particular give it a more traditional feel, and I like using it when I have some left over from making Easy Tuscan White Bean Soup (Creamy!).
  • Make it gluten-free: Use your favourite gluten-free short pasta instead of ditali. Double-check your stock too, some brands sneak gluten in there.

How to make Easy Beef Minestrone Soup

Step 1: Season the beef mince with salt and pepper, then use a tablespoon measure to form roughly 20 mini meatballs.

Step 2: Heat the olive oil in a large pot over medium-high heat and brown the meatballs evenly for about 6 minutes total.

Step 3: Remove the meatballs and set them aside, leaving the rich rendered beef fat in the pan to fry your diced onion, carrots, celery, and minced garlic for 6 minutes.

Step 4: Pour in the chopped tomatoes, Italian seasoning, cayenne, beef stock, diced courgette, ditali pasta, and the browned meatballs, then simmer gently for 12 to 15 minutes.

  • I love cooking this minestrone with beef in a wide-based casserole dish for an even distribution of heat. 
  • Don’t drain the fat after browning the meatballs. Frying the veg in that rendered fat is what gives this beef minestrone soup its depth, and it’s the one step worth protecting.
  • The cavolo nero and beans go in for the last 3 minutes only. Any longer and they go soft, and mushy veg is the most common complaint I see with this kind of soup.

Minestrone is a hearty Italian vegetable soup that almost always includes beans and pasta, which is what makes it more substantial than a regular vegetable broth. The name roughly translates to “big soup” and it was traditionally made to use up whatever vegetables needed finishing off. Peasant food in the best possible way: filling, adaptable, and genuinely delicious.

Leftover Storage and Reheat Instructions

Ingredients

  • 500 g beef mince, 20% fat
  • 1 onion, thinly sliced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 4 cloves of garlic, minced
  • 400 g can of chopped tomatoes
  • 2 courgettes, diced
  • 1 can of white beans, rinsed & drained
  • 1 can of pinto beans, rinsed & drained
  • 200 g ditali
  • 30 g parmesan
  • 100 g cavolo nero
  • Fresh basil

Cupboard Essentials

  • 1 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp cayenne pepper
  • 1.3 litres beef stock
  • Salt
  • Pepper

Method

  • Start by seasoning the beef mince with salt and pepper. Using a tablespoon measure, form around 20 mini meatballs.
  • Preheat a large/deep pot over a medium/high heat. Once hot, add the olive oil and meatballs to the pan, evenly distributing as much as possible. Leave to brown for around 4 minutes, then stir and continue to fry for another couple of minutes.
  • Set the meatballs aside, leaving the rendered fat in the pan. Next, add the onion, carrots, celery and garlic into the pan. Season generously with salt and pepper and fry for around 6 minutes, stirring occasionally.
  • Next, add the chopped tomatoes, Italian seasoning, cayenne pepper, beef stock, meatballs, courgette and ditali into the pot. Cook for around 12-15 minutes over a low simmer, adding the white beans and pinto beans and cavolo nero into the pot for the final 3 minutes of cook time.
  • Season to taste and pour into bowls. Top with fresh basil and a sprinkle of grated parmesan.
