This healthy buffalo chicken dip is everything I love about the classic version, just a little lighter. It keeps all the spicy, creamy, cheesy goodness but uses blended cottage cheese to make it extra creamy and way higher in protein. It’s a great protein buffalo chicken dip that’s brilliant served with chips, veggies, or with my Healthy Crispy Chicken Wrap. It’s honestly my go-to anytime I need something easy for potlucks, parties & game day.

Try this healthy buffalo chicken dip with cottage cheese and rotisserie chicken. Creamy, high protein & perfect for your next party!

Ingredients

  • 400 g rotisserie chicken, shredded
  • 5 tbsp buffalo franks
  • 100 g blue cheese
  • 300 ml sour cream
  • 100 g cottage cheese, blend
  • 200 g red Leicester cheese
  • 1 tsp flakey salt
  • Black pepper
  • Fresh chives/ Fresh dill to garnish

Method

  • Shred your chicken meat, whether that’s shredded chicken breast, rotisserie chicken or I used leftover chicken wing meat.
  • If you want a smoother consistency from the cottage cheese, add the sour cream and cottage cheese into a tall glass and use an immersion blender to blend until smooth.
  • Preheat your grill to 400°F.
  • To a large bowl, add the shredded chicken, sour cream/cottage cheese blend, one third of the red Leicester cheese, buffalo franks and half of the blue cheese. Mix until well combined, then pour into a cast-iron pan and spread to level out the dip with a spatula.
  • Top with the remaining red leicester and blue cheese and pop under the grill for 15-20 minutes, or until golden and bubbly.
  • Finish with fresh chives/dill and dig in!

Notes
