When it comes to achieving that perfect crispy exterior, the type of potato you use makes a difference. In fact, the best potatoes to use are waxy potatoes because they get the best crisp on the outside. My favorites are fingerlings, red potatoes, and Yukon Gold potatoes.
However, you can still use a starchy potato if you like, like Russet, King Edwards, or Maris Piper, though you may want to soak the potatoes before air frying them to help remove some of the starch.

You can definitely air fry cubed potatoes from frozen! Frozen potatoes make life a little easier since you don’t have to dice them yourself. Just air fry the frozen potatoes about 10 minutes longer than fresh ones. To ensure they are extra crispy and tender, always preheat your air fryer, cook on a high heat, and make sure the potatoes are thoroughly dry before adding oil.
Avoiding Sogginess
If you find your potato cubes in air fryer are not getting crispy enough, you can try soaking them for 30 minutes or more in a bowl of cold water after being diced to remove that excess starch. Another important element is oil and avoiding stickiness. For example, to make sure they get nice and crispy, it is a good idea to add a small amount of oil to your potato cubes.
