How Long Does Cooked Bacon Last in the Fridge? (+ What To Do With It)

Leftover bacon feels like a trick question, but it does happen! You batch-cook on a Sunday, or you only needed a couple of rashers for a recipe and now there’s half a pack sitting there. So: how long does cooked bacon last in the fridge?

The short answer is up to 5 days in the fridge, if you store it properly. The longer answer involves a bit more nuance, because technically safe & actually tasty are two different things when it comes to bacon. I’ll walk you through both, so you’ll find out how long is cooked bacon good for, as well as the best ways to use it up so none of it goes to waste.

How Long Does Cooked Bacon Last in the Fridge?

Cooked bacon will last up to 4-5 days in the fridge, stored in an airtight container or bag at or below 4°C (40°F). That’s what the USDA recommends, and most food safety sources agree.

What they don’t always say, though, is that best and safe aren’t the same. In my experience, cooked bacon is SO much better on day 1 or 2 when it’s super crispy & tasty. By day 4, it’s a bit soft, a bit greasy, and the flavour has dulled. Still fine to eat technically, but you’re not winning any breakfast awards.

If you’re meal prepping with bacon, I’d plan to use it within 3 days and treat the 5-day window as the outer limit, not the target.

How to Store Cooked Bacon in the Fridge So It Stays Good

The biggest enemy of cooked bacon in the fridge is moisture. Once it sits in its own grease in a sealed bag, the texture goes soft annoyingly fast. A few things make a difference here:

  • Let it cool completely first: Putting warm bacon straight into a container traps steam, which makes it soggy. Give it 10-15 minutes on a wire rack or plate before you store it.
  • Layer with paper towels: This is the trick I always use now! Line your airtight container with a piece of kitchen roll (paper towel) before adding the bacon, and layer another piece on top. It absorbs the excess fat and keeps the moisture down. 
  • Keep it airtight; A zip-lock bag with the air squeezed out works great. Glass containers with clip lids are even better since they don’t absorb smells.
  • Store at the back of the fridge: Temperature is more consistent away from the door, especially if yours is opened frequently.

Thick-cut bacon needs slightly more care as it holds more moisture, so I’d use a layer of parchment paper between slices as well as the paper towel trick.

How Long Can Cooked Bacon Sit Out at Room Temperature?

This matters more than you’d think. Cooked bacon shouldn’t sit out for more than 2 hours at room temperature, and if it’s a warm day or your kitchen is hot, that drops to 1 hour.

After that, bacteria can grow quickly enough to make it unsafe, regardless of how it was stored before. So if you’ve laid out a breakfast spread and forgot about the last few rashers, the 2-hour rule is your guide.

This is also why you should never thaw frozen bacon on the counter. More on that below.

Can You Freeze Cooked Bacon?

Yes, and you should definitely go for it if you’ve got more than you’ll eat in 4-5 days. How long does cooked bacon last in the fridge is very different from how long it lasts in the freezer obviously. Cooked bacon freezes well for up to 1 month before quality starts to drop, though it’s technically safe even beyond that.

The best way to freeze it:

  1. Let it cool completely and pat it dry with kitchen roll
  2. Lay strips flat on a baking sheet lined with parchment and freeze until solid (about 2 hours)
  3. Transfer to a freezer bag, press out as much air as possible, and label it with the date

Freezing flat first means the strips don’t stick together, so you can pull out exactly what you need rather than defrosting the whole lot each time.

Bacon bits are even easier – just tip them into a small freezer bag or container and they’ll last up to 6 months.

How to Defrost Frozen Cooked Bacon

There are 3 safe ways to do it:

  • In the fridge overnight: The best option for texture and safety. Once defrosted, use within 7 days.
  • Under cold running water: Keep the bacon sealed and submerge it in cold water, changing the water every 30 minutes. Cook immediately after.
  • In the microwave: Fastest, but it can start to cook the edges. Fine if you’re reheating it straight away anyway.

What you should NEVER do: leave it out on the counter to defrost. Room temperature is exactly where bacteria thrive fastest.

How to Reheat Cooked Bacon

The microwave works fine, just 20-30 seconds on a plate lined with kitchen roll is usually enough. But if you want it to crisp back up, the air fryer is miles better. My air fryer bacon recipe has all the details, but 2-3 minutes at 180°C is usually all you need to bring stored bacon back to life.

The oven also works, just lay strips on a baking rack and heat at 200°C for about 5 minutes.

How to Tell If Cooked Bacon Has Gone Bad

Even within the 5-day window, it’s worth doing a quick check before using it. Here’s what you’re looking for:

  • Smell: fresh cooked bacon smells smoky and savoury. If there’s a sour, rancid, or sulphur-y note to it, that’s your cue to bin it. This is usually the first sign.
  • Colour: cooked bacon should be a browny-pink to deep brown. If you’re seeing grey patches, green tones, or any mould, don’t eat it as it could be dangerous. This is why learning how long does cooked bacon last in the fridge is super important.
  • Texture: it’s normal for fridge-stored bacon to be a little softer than when freshly cooked. But if it feels slimy or sticky rather than just soft, that’s bacterial growth and it needs to go.
  • When in doubt, throw it out. Bacon is cheap enough that it’s not worth the risk of food poisoning. And if you find yourself regularly throwing it away, that’s a sign to cook less at a time or move to freezing it more consistently.

The Best Ways to Use Up Leftover Cooked Bacon

Leftover bacon makes everything better when you slot it in, in my opinion. A few of my favourites:

The thing about cooked bacon is that because it’s already cooked, it basically just needs to come up to temperature and get a little heat on it. It doesn’t need long. 5 minutes in a pan or a couple of minutes in the air fryer and it’s good to go.
