One-Pot Chicken Soup
Try this comforting and filling One-Pot Chicken Soup. Packed full of nutrients and veggies and so easy to make. Delicious!
Ingredients
- 2 chicken breasts (£1.55)
- 500 g carrots (£0.34)
- 3 celery stalks (£0.50)
- 1 lemon (£0.69/4)=(£0.17)
- 2/3 small onions (£0.50)
- 1 large sweet potato (£0.64 )
- 1 bunch fresh parsley (£0.49)
Cupboard Essentials
- 1.2 litre veggie stock
- 1 tbsp olive oil
- Salt & Pepper
Method
I love love love this recipe. Souper simple (#sorrynotsorry) and really comforting. The recipe makes 4 large portions or 6 average size, the prices I calculated are for 4 though. Keepin it real!
- Chop the carrots, celery, onions and sweet potato.
- In a large saucepan, add a drizzle of olive oil and pour the onions into the pan.
- Gently fry till they are translucent (approx 5-6 minutes) and then add the other veggies with the stock.
- Add in the chicken breasts (whole) and they are fully submerged in the stock.
- Simmer for 40 minutes on a low heat and relaxx
- After this time, remove the chicken from the soup and shred it using two forks.
- Pop the chicken back in and squeeze the juice of half a lemon into the saucepan.
- Serve up salt to taste and lots of black pep and a sprinkle of fresh parsley.
