Take your standard bangers & mash but make it sweet & spicy with these devilled sausages. It’s a great way to elevate a weeknight meal whilst still keeping things cheap. I know some people look for deviled sausages in the slow cooker, but my pan method gives you that nice browning flavour in way less time.   • Sausages: I love to use pork sausages for the best flavour, but you can definitely use quorn/veggie ones too. If you want to reduce the calories of your devil sausages, you can use chicken sausages too, though I think my Tender Cast Iron Chicken Breast is the best low cal option!!
  • Apples: A pink apple adds natural sweetness which balances the acidity of the tomatoes perfectly for that classic devilled sausages taste recipe. Use any leftovers in this Apple Pie Porridge with Walnuts.
  • Branston pickle: This adds chunks of veg and a spiced kick without needing loads of individual spices. It gives the sauce a unique richness you just can’t get from tomatoes alone.

Variations/ Adaptations

  • Make it veggie: You can easily switch ingredients out and use vegetarian sausages to adapt these devilled sausages for non-meat eaters. It works just as well and is still SO satisfying. Make sure to use veggie stock too, which you can then use to make a Vegetable Paella
  • Spicy version: If you like your devilled sausage recipes hot, just add some chilli flakes or cayenne pepper to the sauce. How to make Easy Devilled Sausages

Step 1: Slice the onion and apple. Before proceeding, brown the sausages in a pan with olive oil for about 8 mins, then remove and set them aside.

Step 2: Add the sliced onion and apple into the same pan used for the sausages. Season with salt and pepper.

Step 3: Fry the mixture for around 6 minutes until softened and browned. Add the garlic and fry for one final minute.

Step 5: Pour in the chopped tomatoes, beef stock, Worcestershire sauce, Branston pickle, and honey.

Step 6: Simmer on low/medium for 15 mins (use a cornflour slurry to thicken if desired). Serve topped with fresh parsley and black pepper.

  • Don’t boil the sauce too hard when making this easy devilled sausages recipe – keep it on a low simmer. If you boil it aggressively, the liquid will evaporate before the apples soften and the flavours meld.
  • Taste the devilled sausages before serving and add more honey if your apples were a bit sour. If you need a thicker sauce, add a cornflour slurry (½ tbsp cornflour + 2 tbsp cold water combined) into it.

What Are Devilled Sausages?

British devilled sausages are basically just sausages cooked in a tangy tomato-based sauce. If you didn’t grow up eating them, the name might make you think they are super spicy. Honestly, they aren’t! Devilled just refers to the zesty condiments (like Worcestershire sauce or mustard) we use to get that deep flavour. It’s a bit old-school but still so tasty.

Whilst some recipes use loads of cayenne pepper, I prefer a stickier, sweeter glaze. I make my devilled sausages with apple to get that natural sweetness which helps balance the vinegar. It’s definitely more savoury than hot.

This recipe is actually perfect if you want devilled sausages without HP sauce, as we use Branston Pickle instead for that chunky texture. It’s basically just a really delicious way to upgrade a pack of sausages into a proper meal using what you already have.

I prefer the pan for homemade devilled sausages because you get better caramelisation. If you do use a slow cooker, cook on low for 4 hours.

This quick devilled sausages recipe is the perfect one-pan dinner. Sweet apple & Branston pickle make the sauce SO tasty. Ready in 30 mins!

Ingredients

  • 12 sausages
  • 1 onion, thinly sliced
  • 1 pink apple, peeled and thinly sliced
  • 3 cloves of garlic, finely chopped
  • 400 g chopped tomatoes
  • Fresh parsley

Cupboard Essentials

  • 200 ml beef stock
  • 1 tbsp olive oil
  • 1 tbsp Worcester sauce
  • 1 tbsp Branston pickle
  • ½ tbsp honey

Method

  • Start by adding the sausages to a large frying pan over a medium heat with olive oil. Pierce the sausage with a fork and fry for around 8 minutes, or until the sausages brown and get some nice colour.
  • Set the sausages aside and add the onion and apple into the pan. Season with salt and pepper and fry for around 6 minutes, or until softened.
  • Add the garlic and fry for a further minute, then pour the chopped tomatoes, beef stock, worcester sauce, Branston pickle, honey and sausages back into the pan.
  • Cook for 15 minutes over a low/medium heat. For a thicker sauce, add a cornflour slurry (½ tbsp cornflour + 2 tbsp cold water combined) into the sauce.
  • Top with fresh parsley, lots of black pepper and dig in!
