Why this recipe works

This apple pie inspired porridge is healthy and warming. The perfect healthy breakfast to have when you have a bit more time in the morning. The mix of almond milk and water provides a creamy base with the porridge, which works as the best foundation to the apple & walnut toppings. The honey, cornstarch and water combo is a healthy cheat to achieve a caramel-esque sauce. Paired with the caramelised apple chunks for an extra boost of sweetness. I wanted to add a contrast to all the saucy sweetness and creaminess of the apple porridge, which the crispy, roasted, honey-glazed walnuts offer.

Ingredients

Oats

An amazing complex carb to start your day with, providing you with energy all through the morning. They’re also a great complex carb for celiacs as they’re gluten-free.

Apple

I think pink lady apples work best with this apple porridge. Their sweetness gives off the most apple-pie like flavour.

Cornflour

The cornflour, water & honey mix reduces to form a caramel like sauce which is lower in calories and much healthier.

Almond milk

I think the nuttyness of the almond milk pairs nicely with the walnut toppings. Feel free to pair with another plant-based or regular cows milk. Walnuts Crunchy, sweet roasted walnuts. A great textural contrast that’s packed full of nutrients. Honey The cupboard essential that adds sweetness to any sweet or savoury dish. You can substitute with maple syrup for this apple pie porridge if you’re vegan.

FAQ

Can you swap apple for something else?

It wouldn’t be apple pie porridge without the apple but you could definitely swap the apples for pears if you’re not into apple.

How would you serve this in summer?

You could switch this in summer by making it as overnight oats. Add the milk & water to the oats and leave in the fridge overnight to soak. In the morning serve with fresh chopped apple, honey and cinnamon. Delish!

Ingredients

  • 50 g handful walnut halves (£1.79/3)=(£0.60)
  • 1 apple, chopped into cubes (£1.00/6)=(£0.16)
  • 100 g porridge oats (£0.75)
  • ½ pint almond milk (£1.80/2)=(£0.90)
  • ½ pint water

Cupboard Essentials

  • 2 tbsp + 1 tsp honey
  • 1 tsp cornflour

Method

Preheat oven to 190°C fan

  • Place the walnuts on a baking tray and drizzle (1tsp) of honey over them. Shake the tray and pop in the oven, timer set to 10 minutes.
  • Meanwhile, add the apple into a saucepan with the honey & 200ml of water. Bring up to a boil and simmer until the water is almost evaporated and the apples start to caramelise and brown.
  • Once this happens, add another 100ml of water whisked with the cornflour. Pour this into the mix and it should quickly thicken to form the syrup. Set the saucy apples aside whilst you cook the porridge.
  • Using the same pan (for added sweetness), add the oats, ½ pint of water and ½ pint of almond milk. Heat on medium/low for around 5 minutes until you achieve your desired porridge consistency.
  • Serve up the porridge with some of the sweet apples, the toasted walnuts and a sprinkle of cinnamon.
