The ingredients that make this Spinach Pasta Sauce recipe fantastic are the following:
Spinach
I opt for fresh spinach in this recipe to make the dish super speedy. You could use frozen spinach though if you prefer/have it on hand, it will just slightly increase the cook time.
Onion & garlic
Foundational ingredients for all great pasta sauces.
Spaghetti
I love a long thin pasta shape for this recipe as I love the way it clings to the sauce. Linguine would also work amazingly. If you want to use a shorter pasta shape- something like orecchiette would be great for this pasta with spinach sauce.

Make it Vegan: to make this spinach sauce pasta vegetarian, use vegetarian parmesan. To make it vegan, substitute with 3 tbsp nutritional yeast instead of the parmesan. Or a vegan parmesan alternative.
Add Some Spice: I looove to add some chilli flakes/ red pepper flakes to this dish for a little kick. If you love fresh chilli you can also finely chop a few chillies and add into the garlic/onion mix to gently fry for this spinach pasta recipe.
3. Once the garlic and onions have cooked, add the spinach and dried parsley to the pan and add a ladle of salty pasta water (around 200 ml) (Image 3).
4. After about 2 minutes, the spinach will begin to wilt. Add the contents of the frying pan to a blender and blend until smooth (Image 4).
5. Add the blended spinach pasta sauce back into the pan and reduce the heat to low. Add the al dente spaghetti into the pan and add two thirds of the parmesan (Image 5).
6. Stir until well combined adding a few ladles and pasta water to loosen. Serve topped with parmesan cheese and a sprinkle of chili flakes. (Image 6).

Meal Prep: There are two ways to meal prep this. You can simply prepare the green pasta sauce recipe by cooking and following the recipe, and then pouring the sauce into ice cube trays or muffin tins. This allows you to individually defrost servings when you feel like it.
Or if you want to serve portion controlled servings, you can divide into meal prep containers and store in the fridge. Eat within 4 days. As you can see with my meal prep, I paired this spinach pasta sauce recipe with mozzarella & some pan-fried chicken breast.

Refrigerator: Store in an airtight container for up to 4 days in the fridge.
Freezer: As mentioned earlier, you can store the spinach sauce recipe in the freezer in ice cube trays or muffin tins for individual servings. Or if you know that youโre going to reheat a whole batch, you can freeze in one container for up to 3 months. You caaan freeze the final dish (incorporated with the pasta too) but I prefer to avoid freezing the pasta for the best texture.
Reheat: Add 1 tbsp of water onto your spinach pasta sauce and place in the microwave for 2 minutes, stirring once halfway. Cook until piping hot and enjoy!
You definitely can! This would make an amazingly vibrant green layer in a white based lasagna or you could use it in any other pasta bake dish. I would sub the spaghetti for a shorter shape of pasta though like spirali, penne etc!ย
