The perfect balance – the salty, tangy halloumi cuts through the richness of the fatty avocado. I think halloumi, avocado and tomato are the holy trifecta for the best avocado toast.
A brunch fakeaway – millennials often get trolled for spending their money on coffee and avocado toast, and while we shouldn’t give into the trolls, making this elevated fakeaway creation for less does make you feel quite smug.
Customisable – if you like spice you can add some hot honey onto this avocado toast recipe. Or even some sriracha or franks hot sauce would work well.

Low Fat Halloumi – I tend to use low fat halloumi for this avocado toast recipe, as we’re already getting a decent amount of healthy fats from the avocado.
On-the-vine tomatoes– if possible, for the best avocado toast, opt for high quality tomatoes to really make the flavour shine through.
Avocado – ripe and ready so you’re able to dive straight in and make this toast ASAP!

3. Then lightly spread the mayonnaise over the semi-toasted sourdough and place the bread mayo-side down in a non-stick pan (Image 3).
4. Gently fry until the bread has turned golden brown and crispy. Rotate to fry the other side for one minute, we’re not trying to achieve the same level of crisp here (Image 4).
5. Make sure you layer in the order suggested! Start with the sourdough’s crispy mayo side up – I have thought about it too much and the order is very intentional lol. Then add a dollop of mayo, spread evenly across the toast and then add two pieces of sliced beef tomato and season with salt (Image 5).
6. Next, slice the avocado and add to the toast with a squeeze of lemon, before seasoning with pepper. Finally, top with halloumi and if you love a bit of acidity, go for another squeeze of lemon. The best. toast. ever! (Image 6).
Make it vegan – substitute the halloumi with some scrambled tofu to make this avocado toast recipe vegan.
Make it spicy – additions like hot sauce, red chilli flakes and hot honey work really well with this recipe.
Add a glaze to the halloumi– if you want to go a bit wild, you could add mango chutney or sweet chilli onto the halloumi for the last 2 minutes of fry time. This amps up the caramalisation and adds some intense flavour.

Yes, avocados are rich in healthy fats which help to reduce the bad cholesterol in our blood. They are also rich in potassium, Vitamin K, C and E. Avocado toast can be calorific though so serving sizes should be considered and it should be eaten in moderation.
Pouched and fried eggs would work well with this recipe. Vegetables like mushrooms, roasted peppers, grilled asparagus would be great additions too.
This shouldn’t happen if you’re serving it immediately but a squeeze of lemon/lime stops the oxidation process from happening, which prevents the avocado from changing colour. Luckily we already do that for this recipe!
