Mushrooms & Garlic
I used shiitake mushrooms for this recipe, which was a bit of a splurge in comparison to standard mushrooms. I love the texture and flavour of them but you could definitely opt for button mushrooms, chestnut mushrooms or whichever mushrooms you can get your hands on.

Partner with garlic and to me, there’s nothing better than a garlicky, browned mushroom. 

Low Fat Cream Cheese
The contrast of the salty, garlicky mushrooms on a bed of cream cheese is so so good. I use low fat cream cheese here, as we use rapeseed oil to fry the mushrooms and butter to toast the bread so this helps to keep the calories a little lower. 

Sourdough bread
No doubt the best bread to pan-fry and toast with! You could use ciabatta or panini but I’d stick with the sourdough!

What is the best bread for toasting?

Everyone has their favourite bread, so the answer for this I’d say is dependent on which breads you love to eat, combined with whether it can handle the pan-fried/ toasting process. 

To be considered a good bread for toasting, it should be a thicker cut of bread and be more rigid to ensure that it doesn’t fall apart when toasting. 

Some of my recommendations include:

  1. Sourdough (my fave for this mushroom toast recipe)
  2. Thick sliced white/brown bread
  3. Ciabatta 
  4. A baguette, sliced into thick pieces either lengthways (in half) or widthways into small oval pieces.

How to make this mushroom toast recipe

  1. Start by lightly buttering butter both sides of the sourdough and toast in a pan (Image 1).
  2. Frying for 1 minute on each side on a high heat (Image 2).

3. Next, add the rapeseed oil and mushrooms into the pan. Distribute across the pan so they aren’t touching (Image 3).

4. Leave to brown on a high heat for a couple of minutes then stir (Image 4).

5. Reduce the heat and add the soy sauce, butter and garlic. Season with salt and lots of pepper and fry for a couple more minutes. Set the mushroom mix aside (Image 5).

6. Add a layer of cream cheese onto your crispy toast, a sprinkle of rocket and then the saucy browned mushrooms. Add a squeeze of lemon juice (Image 6).

Tips and Tricks

  • Make sure not to overcrowd the pan, as this will cause the mushrooms to steam instead of getting nicely caramelised.  Don’t stir the mushrooms for a good few minutes before turning, so they become nicely browned.
  • While sautéing the mushrooms, season them with salt and pepper and a dash of soy sauce for the best umami flavour.
  • Garnish with peppery rocket for freshness and visual appeal and add some parma ham or a few slices of prosciutto for a more indulgent touch.

You sure can! If you opt for a vegan cream cheese and butter, then this mushroom toast recipe is vegan. I like the oatly cream cheese and any standard vegan butter!

Ingredients

  • 1 piece sourdough toast (£1.85/10)=(£0.18)
  • 1 handful of mushrooms (I used shitake) (£1.50/4)=(£0.38)
  • 1 tbsp butter, salted (£1.45/10)=£0.15)
  • 1 clove garlic (£0.25/4)=(£0.06)
  • 2 tbsp low fat cream cheese (£0.80/4)=(£0.20)
  • 1 handful rocket (£0.60/4)=(£0.15)
  • ¼ lemon, juiced (£0.20/4)=(£0.05)
  • Optional - sprinkle of fresh parsley

Cupboard Essentials

  • ½ tbsp rapeseed oil
  • 1 tsp soy sauce
  • Salt & Pepper
  • Optional chilli flakes

Method

Notes

  • Avoid overcrowding the pan to prevent steaming and achieve caramelisation.
  • Let the mushrooms brown by refraining from stirring them initially.
  • Season mushrooms with salt, pepper, and soy sauce for umami flavor. Garnish with peppery rocket and add parma ham or prosciutto for indulgence.
