Ingredients

  • 2 (2 x 326g packs) 8 quorn sausages (£3.18)⁠
  • 1 butternut squash (£0.95⁠)
  • 3 red onions (£0.47⁠)
  • 6 tomatoes (£0.69⁠)
  • 3 courgettes (£1.15⁠)
  • Bag tenderstem broccoli (£1.19⁠)
  • Bunch of fresh thyme (£0.48⁠)

Cupboard Essentials

  • 2 tbsp of olive oil
  • Salt & Pepper

Method

Simple and easy meal prep, with minimal effort & maximal nutrients

    Preheat oven to 180°C⁠

    • Start by roughly chopping all of the vegetables into similar bitesize pieces.
    • Place on a large baking tray and drizzle over 2 tbsp of olive oil. Season with salt and pepper.
    • Use your hands to remove the thyme from the stems by running your fingers against the grain of the herb. Give the tray a shake so that the oil, seasoning and thyme is evenly coating the veg. ⁠
    • Pop in the oven for 25 minutes. Once the timer has gone off, add the sausages on top and pop back in the oven for a further 20 minutes.
