This tiktok recipe first went viral around a month ago and I think that could be for a number of reasons. Firstly, combining egg, yogurt and maple syrup and then baking for 5 minutes = custard? I had no clue. Secondly, custard on toast? Sounds strange, but it’s so so good.
I love how this is a sweet breakfast, whilst still being moderately healthy. It feels like you’re having dessert for breakfast. The custard yogurt toast also uses minimal ingredients.
I think my addition of chocolate swirls adds a fun artsy element to it, where you can practice your decorating skills. A perfect brunch recipe or mid-week recipe as you can whip it up super quickly.
Any thick bread would work here as you need to have enough depth to indent the bread slightly. I think wholemeal/sourdough might detract from the custard flavours, but you could definitely try that. For an extra sweet custard toast, you could use brioche.
The basis of the custard
Adds a rich sweetness. You can use honey here to make it more budget friendly, but I do love the unique flavour of maple syrup!
Use your favourite chocolate here to melt and swirl into your custard toast.
PREHEAT OVEN TO 180°C
Combine the yogurt, egg and honey in a mixing bowl until you have a smooth consistency.
Add the 3 slices of bread to a baking tray and then using a spoon or your hand push down/indent the centre, leaving an edge of 1cm around the crust.
Then add the chocolate squares to a bowl. Rest the bowl in a metal sieve over the hot water, while the chocolate starts to melt.
Leave the chocolate to melt.
Now pour the custard mix onto the 3 slices of toast, until level with the crust and then swirl the melted chocolate over the custard by adding tiny drops and then dragging a thin object (I used a chopstick) through the drops to create a swirl.
Can I make this ahead of time?
I would prepare and enjoy this when served immediately out of the oven.
Can I freeze this?
I wouldn’t freeze this recipe, as I think the bread would lose it’s crispiness when reheating in the oven and the custard/chocolate would freeze weirdly. Luckily it’s so easy to make that you’ll have no desire to batch make this recipe and freeze!
